Christmas Breakfast Sausage Casserole

This was an excellent salsa with the ingredients easily on hand. I made a second batch that suited our local flavor (Oklahoma Salsa Lovers Version) with the following modifications: 1 can of green chilis, 1/2 teaspoon brown sugar, 2 teaspoons minced garlic. The brown sugar almost adds a roasted quality to the salsa. Excellent Recipe!

Grilled Potatoes and Onion

Quick, easy grilling side item. I used a mandolin type slicer to cut down on the prep time. The only thing I would change would be to spray the foil with Pam as I had some of the potatoes stick to the aluminum foil. Thanks for the great recipe!

Summer Corn Salad

This is a quick and easy recipe that is overall healthy. But, I too found that the flavor needed SOMETHING. I will try this again and may experiment with other spices.

Kalua Pig in a Slow Cooker

I was surprised at how tender and mild the flavor of the meat. I did not have the hawaiian sea salt but used kosher salt instead. I will try the hawaiian sea salt version next. We used the left over meat with barbque sauce for sandwiches. This was excellent!

Sesame Crusted Mahi Mahi with Soy Shiso Ginger Butter Sauce

Excellent recipe which I have used with Mahi Mahi and Salmon. The butter sauce was excellent despite not being able to locate the Shiso in Oklahoma.

Dry Rub for Ribs

I would rate this at 4 1/2 stars. I have used this on ribs, chicken, and steak. It can be a little too spicy for the young ones. I scaled and made this in bulk and packaged in nice glass containers and gave for Christmas gifts.

Strawberry Spinach Salad I

Excellent combination of flavors. I served it at Easter and my neice and nephew who have never ate spinach even tried it and liked it. The dressing is very unusual and I placed it in a glass container which showed the levels of ingredients before mixing. This intriqued the kids as well. Thanks!

Potato Chips

This recipe worked despite my doubts. I used a mandolin slicer as recommended. I added seasoning salt to the uncooked slices. You could probably add a no salt substitute as well. My husband, the potato chip expert, loved it and so did the kids. Thanks for the recipe.
