Mustard and Veggie Pasta Salad

Reviewed: Apr. 16, 2005
I love the dressing! I mixed and matched veggies, but the dressing is what really makes this tasty.

This is an excellent baked beans recipe! Be careful with the molasses though. :)

Very tasty, but stay away from the fat-free cream cheese!

Maple Fruit Dip

Reviewed: Jun. 17, 2005
Great tasting dip! Not as thick as a cream cheese dip, so it goes a long way.

Kidney Beans and Corn

Reviewed: Jun. 21, 2005
This dish is a great combination of sweet and spicy. For an interesting twist, use cream corn instead of regular corn.

Yellow Squash Casserole

Reviewed: Aug. 7, 2005
Not very flavorful, but I'm a person who likes a little spice to a dish. Also a little eggy for my tastes.

Cucumbers And Egg Salad

Reviewed: Aug. 28, 2005
To lighten up the recipe, I used only cooked egg whites and used light mayo. Still very tasty! Adding a little salt and pepper also added some great flavor. It's also very light and refreshing in a sandwich.

Not a very sweet cookie, but still a really great taste. I love the walnut/molasses combination!

Savory Corn Muffins

Reviewed: Oct. 15, 2005
I would recommend adding more sugar if you are using this for breakfast. I also made them with plain milk rather than buttermilk and they were still moist.

Oatmeal Craisin Cookies

Reviewed: Nov. 20, 2005
I used less sugar than the recipe called for (3/4 c. white sugar, 3/4 c. brown sugar) and I found them to be sweet enough. I might think about making them with Crisco next time so they don't flatten out as much.

Very tasty and quick recipe. I also added sliced fresh mushrooms to add a few more veggies to the mix.

Jam Muffins

Reviewed: Mar. 15, 2006
I made these muffins with two types of jam/jelly. I found the strawberry jam muffins to be a bit dry. The grape jelly muffins were very moist and sweet though! I would recommend the grape jelly before the strawberry jam.

Shrimp and Asparagus

Reviewed: Mar. 17, 2006
Excellent, simple dish! I cut the oil down to 1/8 c. and the butter down to 1/3 c. and it still had great flavor. I used pepper to flavor it rather than the extra butter.

Chicken Enchiladas V

Reviewed: Aug. 12, 2006
I thought the basic recipe was a bit bland, so I added some red pepper flakes and extra chili powder to the chicken mixture. Also added a can of red enchilada sauce over the top to make it not so dry.

Pork Chop Casserole III

Reviewed: Oct. 22, 2006
I left out the green peppers and instead, added fresh sliced mushrooms. Also used brown rice istead of white rice. Was a bit soupy and had to bake about an hour and a half. Would recommend cutting back the water and maybe not adding the porkchops until 30 minutes in so they don't overbake.
