Fresh Pear Crisp

Great taste, but you have to bake the pears a really long time for them to soften up. I felt like the crumble got a little too dark because of it.

Banana-Zucchini Bread

Very moist bread. Be sure to not put too much in loaf pan otherwise the middle will be doughy. The cranberries add a tart twist!

Dijon Pork Chops

Is a little bit bland. Might add some more seasonings to the bread crumbs, like fresh ground pepper, garlic, etc. Very easy though and pairs up nicely with some garlic rice and green beans.

Cherry Tomatoes

Far too much marinade for the tomatoes. I would recommend doubling the number of tomatoes for the current receipe. The flavor is awesome though!

Gingered Chicken Breast

Be sure to use fresh lemon juice. Using concentrated lemon juice from the bottle makes this VERY tart.

Broiled Tilapia Parmesan

Didn't have basil on hand so used italian herb blend. Still very tasty. I would suggest seasoning the filets a bit prior to broiling so the filets can absorb more of the flavor.

Graham Cracker Muffins

I also was skeptical of the recipe as is, so I added some cinnamon and a 1/2 cup of flour. It really doesn't require any oil or butter! They still come out moist. Very good with jam.

Pork Chop Casserole III

I left out the green peppers and instead, added fresh sliced mushrooms. Also used brown rice istead of white rice. Was a bit soupy and had to bake about an hour and a half. Would recommend cutting back the water and maybe not adding the porkchops until 30 minutes in so they don't overbake.

Chicken Enchiladas V

I thought the basic recipe was a bit bland, so I added some red pepper flakes and extra chili powder to the chicken mixture. Also added a can of red enchilada sauce over the top to make it not so dry.

Shrimp and Asparagus

Excellent, simple dish! I cut the oil down to 1/8 c. and the butter down to 1/3 c. and it still had great flavor. I used pepper to flavor it rather than the extra butter.

Jam Muffins

I made these muffins with two types of jam/jelly. I found the strawberry jam muffins to be a bit dry. The grape jelly muffins were very moist and sweet though! I would recommend the grape jelly before the strawberry jam.

Oatmeal Craisin Cookies

I used less sugar than the recipe called for (3/4 c. white sugar, 3/4 c. brown sugar) and I found them to be sweet enough. I might think about making them with Crisco next time so they don't flatten out as much.

Cucumbers And Egg Salad

To lighten up the recipe, I used only cooked egg whites and used light mayo. Still very tasty! Adding a little salt and pepper also added some great flavor. It's also very light and refreshing in a sandwich.

Kidney Beans and Corn
