Roasted Okra

Amazing! I never cooked with okra before. My sister introduced me to this recipe. I added cayenne pepper for some heat. Easy healthy recipe!

World's Best Lasagna

Loved this Recipe!! I've made it twice now - the first time i just used regular sausages and made the lasagna the same day i made the sauce. it was ok and tasted better the second day. the second time i made it, i used real Italian sausages, added a whole lot of diced veggies (zucchini, carrots, mushrooms, spinach) to the sauce, simmered the sauce and left it in the fridge overnight - AWESOME!! i used fresh basil and parsley, cut down on the salt in the sauce, only added a pinch of salt in the ricotta mixture (which i doubled) to bring out the flavor, added nutmeg as suggested by a reviewer and since i didnt have any Parmesan on hand - left it out. i used the tip by one reviewer to soak the noodles in hot water - just be careful not to wait too long to assemble the lasagna if you do it this way since the noodles stick to each other when the water goes cold. it wasn't a pretty sight but tasted great anyways! also, since i had refrigerated the sauce, it was too thick so i had to heat it up for a minute or so. looking forward to having the leftovers tonight!! *mouth watering* :-)

Buttermilk Pancakes II

amazing! I made these this morning for the first time and it came out beautiful! i was feeding for 2 so i only made 1/3 the batch and that gave me 4 (very thick)pancakes. i didnt have enough buttermilk so i just subbed it with low fat milk and it wasnt too bad. next time i'll do what some reviewers suggested and leave the batter overnight for some extra fluffy pancakes :).

Chicken Noodle Soup

Great soup! i made the following changes: when i cooked the chicken, i added a 1/4 tsp turmeric and salt and pepper. i just steamed it in it's own water until cooked through. then i removed the chicken from the pot and followed the recipe steps. when i added the chicken back, I included the little water that was remaining from when i cooked the chicken. i didnt have celery on hand so used celery salt instead. i didnt have any marijoram either so left it out. i used 6 chicken stocl cubes for the 6 cups of water. tasted great! I made enough for 4 but my husband and i gulped it down in one night :).
