Pumpkin Gingerbread

I have made this recipe for years in mini loaf pans as Holiday gifts. The only changes I make is adding 1/2 c. molasses and decreasing sugar by 1/2 c. I wanted a little more gingerbread flavor, not just pumpkin, and took some previous reviewers suggestions. Breads always come out moist!

Sausage Potato Casserole

Very good simple, hearty meal. Omitted the salt and didn't even notice. The only other change was cooking the onions with the sausage. I cooked it for the full 1 1/2 hours and didn't find it soupy as other reviews stated. Husband and kids (3 & 5) loved it and requested that I make it again. Next time I will take other reviewers suggestions and add more veggies. A keeper - Thanks!

Zesty Slow Cooker Chicken Barbecue

Very good and easy recipe. The only changes I made were putting a sliced onion in the bottom of the crock pot and using about 10 oz Sweet Baby Rays BBQ sauce as that is all I had. I used frozen split chicken breasts (bone in) with the skin removed. About an hour before dinner I took the chicken off the bone (it just fell off) and shredded it then let it sit in the crock pot for the remaining hour - sauce really thickened up once chicken was shredded. Great on rolls. Nice flavor. Very versatile recipe - could be used with pork or beef. Will definately make again.

Apple Raisin Bread

Excellent bread! Moist, flavorful and quick to make. I omitted the nuts, doubled the raisins and added a 1/4 cup wheat germ. Kids (4 and 2 years old) loved it. Great recipe that you can adjust to your taste and I usually have all the ingredients on hand. Will be making again. Thanks!

Marmalade Pork Tenderloin

Very quick and simple to make. The only change I made was using all the salt when I seasoned the pork. Husband and kids loved it. Great use for those little jars of orange marmalade we get in gift baskets. Will definitely make again.

Baked Spaghetti I

I have made this several times and it is always a hit with husband and kids (4 & 1). I have made it as written as well as making changes/additions for what I have on hand (red pepper, garlic, basil). It's an easy recipe to change for personal taste and I usually have the ingredients (no extra grocery shopping). I would not omit the mushroom soup as it adds a nice creaminess. The tomato mixture does not drown the pasta which is our preference and the leftovers are good. An easy weekday recipe which I make on a regular basis.

Rice with Summer Squash

I was looking for a quick summer meal and I almost found it, just needs some adjustments. I added poached chicken to make it a meal and basil because I was worried there wouldn't be enough flavor. Even with those additions I will be adding more seasoning next time as it still needed more. It was quick and can easily be adjusted for what you have on hand. My kids (3 and 1) also liked it.

Pizza Soup II

Easy to make and had the ingredients on hand. My husband was skeptical when I told him what I was making but after trying it he said it did taste like pizza soup. Will make it again but will make some changes - too much pepperoni, will add more meat (hamburg and sausage) and veggies to offset the pepperoni. Flavor was good.

Green Beans with Bread Crumbs

I have made this several times and it is always a hit. It is quick and easy and a nice change for steamed beans. I prefer using fresh beans (usually a mix of yellow and green) but have also used canned when that's all I had and it is a nice way to dress up canned beans. Husband and kids (1 and 3 years old) also love them. The only change I make is mixing the cheese into the bread crumb mixture and tossing everything at once. Thanks for a great addition to my recipe box.

My Mom's Swiss Steak

Very good - made a couple of changes due to what I had on hand and reviews. Used cube steak (dredged in flour before browning) and added garlic with the onions. Also added a can of beef broth with the other veggies as there was not enough liquid for the long cooking time. I thickened the gravy at the end and it was great with the steak as well as on top of mashed potatoes. Quick and easy - will definately make again with the above changes.

Bodacious Brownies

Needed a quick desert for a last minute family get-together - these were quick and I had all the ingredients on hand (used chocolate chips instead of nuts). I also added 2Tbs extra butter as recommended by other reviewers. Everyone found these to be more cake-like rather than fudge-like. The flavor was good but I prefer a more fudgy brownie. I will keep looking for a fudgy brownie recipie - gave 4 stars as they were good, just not my preference.

Gobble Up Granola Snacks

Great recipe to make with the kids. Husband loved them. I am not a fan of marshmallow so this was a nice variation of rice krispie treats. Loved the addition of oats and how quick it was!!

Corn and Zucchini Melody

This was just what I was looking for - something different for zucchini. My husband said you can't go wrong with bacon and cheese in any dish - he also gave 5 stars. I cooked it a little longer so it would be softer for the kids (3 and 1 year olds also ate it) and used cheddar because that's what I had. Only other change was adding a couple cloves of garlic. Great flavor and quick. A keeper!!

Hamburger Stroganoff

Definately a keeper - always looking for something new for hamburger.I made the recipe as is (didn't freeze any, used it all that night) and the only problem was I needed to thicken it at the end - it was a little too thin for my liking but an arrowroot slurry took care of it easily. Next time I will double it and freeze half to see how that works. One and three year olds also liked it. Thanks for a new addition to my recipe box.

Asparagus Beef Stir-Fry

Very good flavor. I followed the recipe except added extra vegetable (peppers, celery, carrots) - very quick as are most stir-frys, the most time consuming is cuting the veggies. The sauce had a good consistency to it - many stir-frys I have made are too dry. My 3 year old also liked it but she is a very good eater. This is a great general recipe to use with any beef/veggie combo. Definately will make it again.
