Coconut Tilapia with Apricot Dipping Sauce
This was fantastic!! My husband asked me if I made these or bought them that's how good they are! Even my son who strongly dislikes fish loved this! Few tips: I baked mine at 350 for 20 minutes and sprayed the fillets with pam to keep them from drying out; per another reviewer's suggestion. I think you could take the cornstarch down to about 1/3 cup (I hate wasting ingredients. I had leftover, after 5 fillets, that I just had to throw out.) I didn't have egg substitute so I beat 2 eggs with about 1 TBSP of water added. Also I almost had enough coconut mixture to do 5 fillets so I just eyed the ingredients and added a bit more to cover the 5th fillet. I didn't have the apricot jam or the horseradish sauce so instead I used about 1/4 cup of orange marmalade and 1/4 c of some home made jacked up peach pecan jelly and I used a packet of Arby's horsey sauce, and 1tsp sweet & Hot mustard from Trader Joes, but that made it a little too sweet so I ended up adding 2 tsp of spicy brown mustard and it was yummo!!! So I think the sauce recipe is a little forgiving if you want to use what you have on hand!

Guinness(R) Corned Beef
WOW!!! All my kids were not happy about trying something so authentic for St Patty's day but after eating this they are now hooked and already have asked me to make again. I cut almost all of the fat of my corned beef (A kosher one without any seasoning packet), followed the recipe exactly using guinness extra stout. I cooked mine for about 3hours and 15 minutes adding some quartered red potatoes the last 30 minutes anf then some quartered cabbage the last 15 minutes! Definitely didn't need the extra spice pack or any other seasoning! Thanks for a new meal to add to our dinner line-up
