Asparagus Cashew Rice Pilaf

I made this dish as a vegetarian entree and served it with a salad for a light dinner. I was out of Jasmine rice, so I substituted another long grain rice. I also used half the amount of butter and instead used a combination of olive and coconut oil. The spaghetti I used was whole grain. I also stirred in a little shredded coconut before serving...this helped make up for the lack of fragrant jasmine rice. And we amped up the garlic and asparagus a little bit, along with a spot of cajun spice. This dish had a great flavor and texture appeal. It seems like wild rice would have been a fine substitute for the spaghetti. We'll be making this again sometime, probably as a side dish.

Greek Potato Stew

Although it's nothing too special, my family really liked this recipe. However, I'm unsure how it would turn out if following exactly as written. To make it less thick, I used 1 can of organic Italian diced tomatoes AND 1 can of organic stewed tomatoes instead of fresh. Also used fresh oregano, double the garlic,a touch of onion, and a dash of crushed red pepper. Sprinkle with feta and serve with a greek salad...yum! Although it took about 20-25 minutes longer to simmer. And using a potato masher on it before serving gives it a better texture in my opinion.

Mystic Mushroom and Quinoa Chowder

A great soup for mushroom lovers! We made a few changes to make it healthier...no heavy cream, just milk, and Un-chicken broth to make it vegetarian. And no creme fraiche either. Had to use portabello instead of shiitake, but tasted fine...even used extra mushrooms. Added garlic too, and honey for molasses. Made a complete meal with salad and bread. A great way to add a new whole grain to your diet!

Coconut Curry Tofu

Coming from a Thai food fanatic....this was incredible! I took the other reviewers suggestions about cooking the tofu and veggies separate from the sauce at first. The sauce would be awesome with any veggie combination, or shrimp, etc. The only thing missing was the chopstix.

Spicy Slow Cooker Black Bean Soup

Delicious! Used NO Chicken broth to make it vegetarian. Play with the spices to taste. Served with fresh cilantro and shredded sharp white cheddar. My husband threw in some leftover veggie sausage crumbles while cooking, which tasted great. Mexican corn bread from an iron skillet rounded the meal out. Even my 4 year old ate it.

Cheese Herb Bread

Amazing bread. Use fresh herbs if you can. I added a little mozzerella cheese because I ran out of parmesan while cooking. Garlic too! THE BEST I've made in the breadmaker to date.

Lemon Glazed Date Sticks

Yummy! These are chewy and the lemon really makes it. I used whole wheat pastry flour instead, with no problems. My husband LOVES these served with lemon gelato! My 4 year old would only lick the icing though.

Blueberry Walnut Bread

This bread did not really turn out for me in the bread maker. I think it might have worked in the oven. It was not cooked in the middle, and stuck to the pan despite spraying it with oil first. I do not have a cake option on the machine, so I used light. Perhaps a different setting would give better results. It did have a good flavor though. Might make good muffins too.

Vegetarian Faux Chicken Patties

These were ok, but not as good as I hoped, and not worth the extra effort for "homemade" patties. Leftovers sat in the fridge and went bad. I won't bother to make again.

Whole Wheat Banana Strawberry Loaf

As is, this recipe does not work. I forgot to read the reviews before making it, so I made it exactly as it reads. The top was burned, the inside too moist, and it fell apart coming out. The flavor is ok, but a little sweet, and I think too much oil. Wish I had taken suggestions from others.

Seared Scallops with Tropical Salsa

This was good, but not as amazing as I expected. The salsa would have been better with more fruit and less bell pepper...but maybe I didn't measure well. The cilantro was fine for me--a cilantro lover. I grilled the scallops, but should have marinated them in juice first. Everyone cleaned their plates though! Good recipe that needs to be altered to individual tastes.

Orzo with Parmesan and Basil

Perfectly delicious! This one was devoured quickly. A better more elegant version of mac-and-cheese. I used a vegetarian chicken style broth. Will make again and again I'm sure. Glad I have that basil growing in my backyard!

These were good in flavor. I tried frying them in a pan, and that was not a good idea. I don't usually eat fried food, so I don't own a deep fryer. I don't know why I even tried it. If you've got one, go for it!
