Baby Back Ribs

It does not get much better than this. I have tried several ways to cook ribs and it does not get easier than this and it certainly does not taste better!! So tender too!!

Clara's White German Chocolate Cake

I was a little intimidated when I read the recipe but I was up for the challenge. It was really not that difficult and it came out so good in the end. My family said it belonged in a gourmet bakery, it was so pretty and the cake was really light and fluffy. I save this one for special occassions or when I want to impress.

Antipasto Pasta Salad

I get excited when I know I have a lot of guests coming because I can make this recipe. It is hard to make it in small portions since some of the ingredients are packaged. Even though the recipe suggest serving the dressing on the side, I just mix it in anyway. If there are leftovers it tastes awesome the next day too.

American Lasagna

I love spending a whole day making this recipe, but what takes me long is making homemade lasagna noodles. It is so worth it to have fresh pasta. Sometimes I will invite my guests to come over early to help me make the pasta and then let them relax while I finish the lasagna. In the end it is ALWAYS worth the wait.

Sassy Chicken Enchilada Dip

I threw a party and was aware one of the guests cannot eat gluten. I knew enchiladas were her favorite dish so I served this with corn chips. Not only did SHE think it was delicious, the rest of the guests crowded around the bowl and devoured it. It got so bad one person stole the empty bowl are started licking it!! Needless to say it was a success. Luckily I served several other gluten free dishes for my friend.

Cinnamon Coffee Cake II

This is my favorite quick and easy cake. I have made this so many times and I never get tired of it. I prefer to use the bundt pan and I thik it looks so pretty with the butterscotch color. No one has a clue that it comes from a box, no reason to tell them either!!

Quick Gnocchi

This was so much fun. I love making fresh pasta and have never tried making gnocchi since I do not have a ricer. I figured since it was boxed potatoes if I messed up I would not have wasted too much time. I think they came out perfect and I am not sure I would bother with real potatoes.

Tuna and Mandarin Salad

I was sick of my same ol' can of tuna on lettuce so I tried this and was wonderfully suprised. The warm tuna was a nice change. I also tried canned chicken and it was even better.

Garlic Cheddar Chicken

This recipes has inspired so many delicious ideas. I like to add different spices or cheeses to the bread crumbs. Once I added fresh thyme to the garlic and butter. The recipe is just a great base for new ideas and it is also perfect as is.

Chewy Chocolate Chip Oatmeal Cookies

I absolutely love this recipe!! Possibly the best cookies ever. I found it a couple months ago and I have already made it several times. I followed the recipe almost exactly, ommitting the walnuts, and they came out PERFECT every time. Unfortunately, this most recent time I followed the advice of adding 1/4 cup flour, 1/2 tsp baking soda, and 1/2 tsp less salt and they were not nearly as good. I always thought mine were fluffy and chewy, but this time they were flat, and my husband said he preferred them a little saltier like the times before. Next time I will do the exact measurements again.
