Italian Meatballs
Mrs. B, the reason you thought they were missing something is because you left out the onion soup mix. These were wonderful. I used one pound ground beef, oregano and fresh parsley, 3/4 cup bread crumbs, one egg, one clove pressed garlic, and some parmesan cheese. Cooked them on a George Foreman grill and simmered in one jar of marinara sauce. Yummy!

Spinach Balls
I tested these out on my picky 8-year-old (who refuses to eat meat) and her two friends. They looked at them kind of funny at first, but then grabbed them and ran outside. Five minutes later they came running in for more. Next time I might use unsalted butter to cut down on sodium.

Pepperoncini Beef
My aunt gave me this recipe a long time ago. The only difference is that hers calls for adding a package of dry onion soup mix. I make this as a regular pot roast with potatoes and carrots...it gives the vegetables a fabulous flavor. The vegetables usually get eaten the first night leaving only the meat for leftovers. I'll have to remember the sandwich idea next time!
