Slow Cooker Casserole
I really liked this recipe. I cut the recipe in 1/2 (there are only 3 of us) and changed it up a bit. I read through all of the reviews and used the low sodium soups. I added 1 cup milk & 1/2 cup water. I had to shut it off after 4 hours. It seemed to disipate. I turned it on later and added the veggies; instead of the mixed veggies, I used mushrooms, green & red peppers, & black olives. Instead of adding the noodles, I prepared them separately and also made some mashed. It was like a gravy and was really good with the mashed. My husband had it over the ramens. The chicken WAS really tender. Instead of cutting it in pieces, I would put it in the Cuisinart instead and dont use a lot of butter. It was really good, just a little different than I expected.

Awesome Eggplant Rollatine
I would rate this dish definately a 10 on taste, but a 3 on preparation. UGH, what a mess. Like other reviewers, the egg & parm chz was tooo thick. I added water. I didn't understand about putting the flour on first THEN adding to the egg/chz mix. The batter wouldn't stick to it :( The first few came out with a lot of breading, then I kind of used my hand to paste it on the eggplant. I agree that 2 large eggplant is way too much. I ended up throwing some away. I didn't slice mine thin, I made them about a centimeter thick. I didn't like the frying part, then the rolling part, they were so hot to roll! Kinda greasy after it baked. Too much spinach/cheese mix left over, had to throw away. 1 cup of flour is WAY too much. I would flour as you go. I nixed the parsley and cooked the spinach first and let it sit to cool. But nevertheless, my husband was totally happy with it and ate 5 rolls! And he is not a "cheezy" person! He loved it and I thought it was really good. Thank you for an exceptionally tasty but messy recipe.

Broccoli Chicken Casserole III
OMG! This was the best tasting casserole EVER. The olives is what gives it that special flavor. I reduced the amount of sour cream for my husband and I also added mushrooms! I steamed the broccoli and mushrooms first. Instead of cubing or cutting the chicken, I used the Cuisinart (every chef should have one!). It shredded the chicken and the consistency in the dish was flourished in every bite. I also used the Cuisinart for the steamed mushrooms and the olives. I totally nixed the curry because I heard many bad things about it; the taste and smell and read one review about how they had to throw it out. I also found a suggestion to put smashed croutons on top. My husband and I couldn't stop eating it and my daughter even had 2nds! Be careful, it's addicting! We froze the leftovers and Lisa is right, the leftovers are even better. I gave some leftovers to my Mother-in-Law and freind at work and they just couldn't stop talking about how good it was. Make it today! YUMMY!!!!
