Golden Rum Cake

I used the suggestions here. I used 1/2 cup coconut oil for the oil. I used Pillsberry yellow cake mix which said pudding added and also used the vanilla pudding. I used Malibu spiced rum with coconut liquor. There was no a strong alcohol taste which I liked. I added a quarter cup of coconut to the walnuts on the bottom of the cake and I folded in about 3/4 cup of coconut to the cake mixture. It only took 45 minutes to cook. I did what someone else suggestion. I let it cool in the bundt pan. I make the mixture for the sauce. I poked holes in the top of the cake, poured in half the mixture in the bottom of the bundt pan and then, put the cake back in the pan. I poked holes in the bottom of the cake and poured the remaining mixture on the bottom and around the sides and let it sit overnight. I left it in the pan while we traveled several hours the next day. This made if very easy to travel with. It was my son's 21st birthday and he requested a rum cake.

Day Before Pay Day Fried Rice

My family loved it. I used left over brown rice from the take out Chinese food from a few days before. I used coconut oil to "stir fry" the rice. I used corn instead of peas and added left over green beans. I didn't have green onions so I used a packet of onion soup and added a small amount of water.

Spinach Alfredo Enchiladas

I used Garlic Alfredo sauce, skipped the mushrooms and added a can of artichoke hearts instead. I used corn tortillas and did not heat them in advance. I only used Monterrey Jack cheese. My family loved it and had no idea there was cottage cheese in the recipe. If they knew, they would have said they wouldn't eat it. A hit!

Pesto Chicken Penne Casserole

I deleted the spinach and added a can of quartered artichokes and two yellow squashes cubed & sauteed. I used a 10 ounce jar of pesto. I also used diced, smoked tomatoes with garlic. I deboned a whole roasted chicken and cubed it - still not 6 cups but enough. Next time, I think I'll delete the pasta and try more vegetables like zucchini. I don't think the bread crumbs and cheese on top added much. Will skip that. Lots left to freeze which I like. My family loved it!
