Ice Cream Base

Easy and yummy. We made this last week and the base custard is outstanding! Instead of using regular half & half, I used non-fat half & half and added 2 cups of pureed peaches -- yummy peach ice cream! We're up for chocolate this week and I think I use 1 cup of non-fat milk, 2 cups of non-fat half & half as well as 1 cup of heavy cream. BTW, this recipe (8 servings) is 2 batches in the Cusinart ice cream machine.

Chicken Cordon Bleu II

Made this last night... the best! I never had chicken cordon bleu before so I didn't know what it was suppose to taste like; however, I've seen the stuff in the frozen food section. This does not have the thick starchy coating so it's perfect for the low carb/Atkins folks. I didn't have ham so I used canadian bacon - fantastic! I used the Atkins baking mix instead of flour (higher fiber I guess). Even with all the alterations - it was perfect!

Whipped Cream Cream Cheese Frosting

Such a winner! I've been looking for a whipped cream frosting recipe that won't wimp out after a day. This is it! I used it on a black forest cake and the frosting stood up perfect for days. Plus... it tastes wonderful too!

Caramel Popcorn

Perfect! I've made this 3 times now. The first time, it was perfect. The second time I grabbed the wrong salt (fake stuff). Don't use fake salt or reduced sodium salt. It will curdle the caramel. When I made my third batch, I used regular (morton) salt and it worked perfectly. I also added pecans and almonds... wow!

Downeast Maine Pumpkin Bread

I followed this recipe but used butter instead of the oil and 1 cup of brown sugar with 2 cups of regular sugar. Amazing! It was great right out of the oven... it was great the next day... and the day after! Makes lots... so gather your friends!

Carol's Chicken Salad

Great chicken salad! Made the salad the night before with everything except the celery, cheese and grapes to keep them fresh/crisp. I served this at a luncheon so I added the remaining items about 3 hours before. Used red grapes instead of green. I also used a whole chicken instead of just breasts (get one from either Sam's or Costco).

Pink Stuff

All I can say is WOW! Made it a number of times for a crowd -- and I've been swamped for the recipe. Great over pancakes and waffles in the morning! Perfect for a baby shower (girl's). I bet canned blueberries (for a boy's) would work in place of the cherries!
