I am 71 yrs married with 6 children and 22 grandchildren. I am Welsh, but now live in New Zealand. I have been disabled for a number of years, but find life as interesting and fun as before. My husband and I attend a Pentecostal church here in Paeroa. We moved house last year and find downsizing a tad stressfull, but know it is a worthwhile move.

My cooking triumphs
Seeing my children enjoy their meal, and my grandchildren. Also seeing visitors content with a meal. Catering a wedding Using less fats. And more fresh herbs Finding ways to disguise tomatoes so my husband will eat and not know he's eating them!
My cooking tragedies
Baked Alaska (years ago) but the meal was a great success, our guests could see that we can make mistakes and have 'flops' and still laugh. Serving my husband cheese and tomatoe, he won't eat either

Spanakopita (Greek Spinach Pie)
Awesome taste, I must remember to take the filo from the frig earlier though:-)

Deluxe Corned Beef Hash
This is how I make my Corned beef hash as well. I add a handful of baby spinach before serving and I serve it with an egg on top and HP sauce too. It's also great with some grated cheese on top, and put under the grill till cheese is melted.

Perfect Baked Potato
Great! Made them tonight, served with mushrooms and other veggies. I like the salty skin... Just gives the potatoes an extra lift.
