Sugar Cookies

I made these cookies a couple of months ago and decided to do them again with Christmas cookie cutters. They turned out brilliant! Such great melt-in-your-mouth texture and buttery flavour (I used 1 cup butter instead of 1/2 butter and 1/2 shortening). I'll be making these any time I need sugar cookies!

Stuffed Guinea Squash (Eggplant)

I've made this recipe a few times now and it comes out great every time! It's such a delicious way to eat eggplant, or "aubergine" as we call it here in England. It's so easy as well!

Apple Oatmeal Crisp

I followed the recipe exactly, with the exception of using wholewheat flour, and it came out so great! It was really easy and delicious! Others have said in their reviews of this recipe that it was too much sugar, but the apples I used were really tart so it worked well. I think if I were using sweeter apples I'd consider cutting down the amount of white sugar, but for today this was just perfect!

Breakfast Upside Down Cake

I made a bit of a mess of this - bad idea to use a springform pan - the egg started leaking out into the oven. Next time I make it, I'll use a different pan and I would reduce the amount of potato and add an extra egg or two. It still tasted great despite the mess I ended up making.

Mushroom Pork Chops

This was great! I used pork steaks rather than chops and non-condensed cream of mushroom soup. I also added white wine and threw in a couple of really big green onions cut in half. Served with mashed potatoes, it was just what I had in mind!

Lemon Glazed Date Sticks

For our 2nd wedding anniversary, my husband gave me a card that said "we can still have dates" along with a package of dates! I thought, what in the world will I do with these? So tonight, I made this recipe and it turned out great! While I was mixing the ingredients, it seemed too thick, but it actually came out perfect. The best part is the delicious icing. Next time I'll make a double batch. Now I can't wait to offer my husband a date in a bar!
