Orzo and Rice

Reviewed: Jan. 14, 2011
This was a nice change from regular rice. I did make some alterations to the recipe after reading the reviews. 1. 2 tsp of butter and olive oil to brown the orzo 2. Used low sodium chicken stock instead of the chicken cubes 3. Added some shredded carrots,1 small diced onion,2 cloves of chopped garlic and about 7 medium chopped mushrooms. All of these were sauteed after I browned the orzo. Then I added the rice and stock. 4. Added just a sprinkle of garlic salt and some dried parsley for color. With these changes this is a definate 5 star recipe. Need I say that I will be making again!

Buttermilk-Battered Calamari

Reviewed: Feb. 4, 2008
I made these last night for Superbowl and they were delish. The only change I made was to add some cajun seasoning. The secret to any calamari is too NOT OVERCOOK.

Oven Brown Rice

Reviewed: Mar. 4, 2007
Great rice side dish. I added some chopped carrots and used olive oil instead of the butter. Did not have chicken stock so I used beef base. Placed a lid on my 2 qt. casserole dish. The rice was cooked perfectly. This is a much better way to cook rice instead of on the stove top.

Asian Potato Salad

Reviewed: May 17, 2010
HI, I am the submitter of this recipe and just want to clarify the amount of potatoe to be used. If the potatoes are quite large than 6 should be enough, of course if they are smaller than use 6-10. Use your judgement. Thank you for all your comments.

Serbian Ground Beef, Veggie, and Potato Bake

Reviewed: Nov. 8, 2007
We enjoyed the combination of spices and vegetables in this dish. Something that I will make again but reduce the amount of "juice" from the ground beef next time.

Coconut Pound Cake

Reviewed: Oct. 19, 2006
Being the first to review this recipe I must say these are simple ingrediants and I didn't know what to expect. This is a must try and if you don't than you are losing out. Yowza! My husband said that this is the best cake that I have ever made and in fact the best cake he has ever eaten. Don't know if it was suppose to turn out the way it did but it came out with a very crusty exterior and deliciously moist interior. I used cake flour instead of reg flour and didn't have any coconut ext so I used some pina cola mix. In place of some of the reg shortening I used butter shortening. Will make again and add some walnuts to the mix. No need for any powdered sugar or icing. Scrumptious as is! Use your imagination for additional toppings. Maybe some hot fudge sauce? Thanks for helping me impress my husband!

Chicken Livers Fandango

Reviewed: Jan. 9, 2005
The ingrediants sounded delicious. I did not have golden mushroom soup so I subed healthy mushroom soup. No white wine so I added some additional stock. I felt it cooked a bit too long. Came out a little dry but the livers made a great pate. We don't eat chicken livers very often but willing to try agin with some adjustments. IE- less cooking time and add some more liquid.

Horseradish Deviled Eggs

Reviewed: Feb. 7, 2011
These were really tasty. The worcester sauce was a nice component with the horseradish. I used spicy brown mustard instead of the dry mustard. Good recipe.

Tuna Noodle Casserole from Scratch

Reviewed: Jan. 22, 2011
Very good as written and of course I had to make some additions. Added some small diced carrots and little processed cheese to make it cheesier.

Turkey Burrito

Reviewed: Aug. 2, 2006
I did not follow the recipe to a tee. Less broth and fresh jalapenos. Let it cook in the slow cooker. Better than the usual leftover menu. My family really enjoyed these. Thanks for a unique idea!

Jay's Signature Pizza Crust

Reviewed: Jan. 21, 2011
Makes a good pizza crust. The exterior is crusty and the interior nice and chewy. I did not prebake my crust. Just added the ingrediants to it and slide it onto my pizza stone with the pizza paddle. I have another recipe similar to this one and will alternate and perfect them to our liking. Thanks for the post!

Lobster Casserole

Reviewed: Aug. 2, 2010
We have fresh lobster on hand during he summer months and I am always looking for different lobster recipes. I did add this to my recipe book and will put this into the rotation. Now I wish we had put out more pots this year. This is tasty and the lobster holds it own even with the other ingrediants. Next time I make it I may try to add some other seafood and additional lobster. By the way, I did include some Old Bay to season it. I am from Maryland and add it to all my seafood dishes.

Apple Cranberry Tart

Reviewed: Mar. 16, 2009
Right on with the tartness of the cranberries and the sweetness of the apples. I made as directed but used 4 small apples and the entire bag of cranberries and forgot to add the dab of butter before applying the top crust. Overall, this was a nice change from Grandma Opals apple pie from this site which is killer.

Slow Cooker London Broil

Reviewed: Oct. 27, 2006
Easy and tasty recipe. Placed the frozen london broil in the slow cooker and cooked for 10 hrs on low. Very tender but just slightly dry. Decreased the amount of onion soup to half the pkg. Added some chopped garlic, steak sauce, white wine and the worcesteshire sauce. I did mix these together prior to pouring it over the broil as previously suggested. Would make again. Thanks for a different way to prepare london broil.

Zesty Slow Cooker Chicken Barbecue

Reviewed: Dec. 21, 2010
I doubled the recipe to take to work for our christmas party. Served on serve and bake rolls that I prepared the night before. I did add some hot sauce to give a little more kick as the bbq sauce was a little mellow. I also defrosted the chicken breast in the microwave and cut them in half before adding them to the slow cooker. This was devoured. Would def make again.

Nutty Lemon Coffee Cake

Reviewed: Aug. 25, 2010
Followed the recipe with the exception of using the juice from 1/2 lemon. Next time I will add more as we enjoy the lemon flavor. I baked this in a tube pan which required a longer bake time. I tested with a long wooden scewer about every 5 mins. A small part of the cake still was not done but that is the fault of my oven. This cake is moist with a little crunch from the sugar mix. Just the right balance. Much better than coffee cake from the store. Great recipe! Give it a try.

Festive Beef Tenderloin

Reviewed: Nov. 23, 2008
The flavors blended well together. I did add about a tsp of dijon mustard to the mayo mixture. The beef was done to perfection and crackers added a nice crunch. I would season the beef with more pepper next time prior to the first broil.

Chicken or Turkey Pie

Reviewed: Oct. 26, 2007
I would have rated this 5 stars but the crust could have been better. My spirals were a little too dense. I prefer something lighter. Just my own preference. The filling was excellent. I did add a small amount of thyme to it and had some leftover brown chicken gravy that I mixed with the chicken stock, flour etc. Overall, it is worth giving it a try. Good comfort food!

Colorful Fried Rice

Reviewed: Mar. 12, 2007
I enjoyed this better than from my usual carryout chinese. Less greasy and I increased the amount of veggies. I did saute the onion and carrots before adding to the rice and used a red onion since that is what I had on hand. Brown rice and left over pork worked well with the combination of veggies and eggs. Variations abound with the basics. Thanks for a simple and delightful dish!
