Spinach with Chickpeas and Fresh Dill

I thought this was very good although just a tad bit much lemon juice. I did not have chickpeas so I substituted with some cannellini beans. Not the same texture(I know) but still very good. I also added just a sprinkle of cumin. This was something that I should definately classify as a "keeper" Love the combination of mostly fresh ingrediants.

High Temperature Eye-of-Round Roast

I am not a big fan of beef but will eat it occasionally. This was an outstanding roast. I did use kosher salt and freshly ground black pepper. Can't wait to have some on a sandwich. Extremely easy,moist and tender. Bravo!

Serbian Ground Beef, Veggie, and Potato Bake

We enjoyed the combination of spices and vegetables in this dish. Something that I will make again but reduce the amount of "juice" from the ground beef next time.

Italian Sausage Soup with Tortellini

This was very good. I only made some minor adjustments to the recipe. I used canned tomatoes and did not add the tomato sauce. Used dried herbs. Additional garlic as well. Overall a pretty decent soup. I think next time I will mash an addtional can of the canellini and use as part of the base to thicken it a bit.

Chicken or Turkey Pie

I would have rated this 5 stars but the crust could have been better. My spirals were a little too dense. I prefer something lighter. Just my own preference. The filling was excellent. I did add a small amount of thyme to it and had some leftover brown chicken gravy that I mixed with the chicken stock,flour etc. Overall, it is worth giving it a try. Good comfort food!

Roasted and Curried Butternut Squash Soup

I have never make butternut squash soup and was skeptical to try but I am sure glad that I did. I followed the recipe as it was written except I used low fat sour cream instead of the yogurt. I like that fact that it was low in calories, fat and extremely healthy soup. The curry blended very well together with all the ingrediants. Thank you for posting this well balanced comfort food.

Simple Salisbury Steak

This recipe definately had me reminiscing. Basic,simple, and oh so good. Even the leftovers were incredible. I followed the recipe to a tee and was not disappointed. The patties were shaped as they should be and they just melted in your mouth. Big thumbs up!

Oven Fried Chicken III

This was very good. I did use some additional seasoning, onion powder and oregano. The only reason that I am only giving this 4 stars was because the breast came out a little dry otherwise it was a keeper. Thanks for posting.

Baked Slow Cooker Chicken

I had a large natural chicken approx 6 lbs from a local farmer. I followed the recipe but added additional seasoning to our taste. Cooked on high for 4 hrs than lowered it to low for another 7 hrs.This was superb. The meat fell right off the bone and was juicy. My compliments to our local farmer and to your recipe.

Eggplant and Zucchini Casserole

This was excellent with a few changes that I made: I added 3/4 cup boiling water to the stuffing mix and decreased the butter to 2 tbsp. Baked the veggies and added garlic and green pepper. Didn't have Colby so I used some shredded Swiss and Provolone. I did add a little extra thyme also. What a great way to use up the summer vegetables. Thanks for sharing!

Mexican Whole Wheat Flour Tortillas

I will give this recipe 5 stars for the taste,texture and ease of preparation. I followed this to a tee and was pleasantly surprised how well they turned out. The only problem I experienced was it did not take as long in my cast iron skillet to "cook" them. Some areas came out a little to dark but that may have been my skillet. I prepard these to make fajitas which were delicious. Overall they were easy to make and I will definately make again. May even invest in a tortilla press!

Marinated Flank Steak

I decided to make fajitas and used this recipe for the marinade. I did let it marinade for 5 hrs. Good but not outstanding. I also made the whole wheat flour tortillas from this site. Made for a nice combination. Will use this marinade again with a little tweaking next time.

Fresh Tomato Pie

I can't believe that I forgot to rate this recipe. Now that the tomatoes are ripenig I was just thinking about the Fresh Tomatoe Pies that I made last year. WOW are these worth the wait for fresh tomatoes. I love this recipe! I do tweak it a bit. Additional seasoning with fresh herbs. Never tried it with bacon but it may be good. If I am going to have a vegetarian meal than this is just what the Dr. ordered. By the way, I do saute the onions before I place them in the crust. Thanks so much for a truly delish savory pie.

Port And Mushroom Sauce Chicken

Yummo! The only changes that I made were the following: Used fresh rosemary and thyme,veggie stock, 1lb of sliced baby bella mushrooms, and did thicken the sauce with corn starch. Evidently I did double the sauce. Loved the wheat flour to coat the chicken which I did slice in half instead of pounding. Don't overcook!

Mom's Turkey Sausage Patties

Yum! Made as instructed except didn't have any ground ginger so I sub'd with some ground mustard and a pinch of nutmeg. I also added some poultry seasoning. Decreased the amount of salt and increased the red pepper. Incredibly easy to make and delicious. A keeper. Thanks for the recipe.

Baked Mushroom Thighs

I thought that it lacked flavor. DH stated "this is really good." Even went back for seconds. Used boneless/skinless thighs,italian bread crumbs and healthy mushroom soup. Next time I will spice it up and use 1/2 white wine and 1/2 milk. Thanks for sharing a decemt recipe for chicken thighs.

Peanut Butter Eggs

Made these with my grandchildren. Little Riley and I had a great time making the dough. Then the rest of them pitched in to shape and dip into the chocolate. A great family activity. By the way, I forgot to say they were absolutely delicious. Much better than the store made product!

Glazed Ham

This was scrumptious! Used an 8 lb pre cooked butt portion. Baked only 1.5 hrs then returned to bake another hr. We don't eat ham very often d/t the salt content but will be using this recipe when we do. Thanks for submitting this delicious recipe.

Colorful Fried Rice

I enjoyed this better than from my usual carryout chinese. Less greasy and I increased the amount of veggies. I did saute the onion and carrots before adding to the rice and used a red onion since that is what I had on hand. Brown rice and left over pork worked well with the combination of veggies and eggs. Variations abound with the basics. Thanks for a simple and delightful dish!
