Spicy Garlic Lime Chicken

Easy and delicious. DH thought is was a little too spicy but I enjoyed it. I used boneless skinless thighs since that is what I had on hand. Lightly browned in the pan and finished it off in the oven made it moist and tender. Would make again. Thanks for a healthy alternative for thighs.

Herbed Twice-Baked Potatoes

Baked Haddock

This was good but my fish did not crisp the way that I expected it to do. I used rack method. Added some old bay as seasoning. Used milk and egg mixture and fresh breadcrumbs. Would make again.

Delicious Raspberry Oatmeal Cookie Bars

First time I have made filled oatmeal bars and very glad I did. Only changes that I made were: Used whole wheat flour. Added some cranberries with a tad of vanilla that I pureed along with the raspberry jam. I did double the recipe and used a 9x13 pan. Came out beautifully from the pan. Delish and will make again.

Greek Garbanzo Bean Salad

Outstanding! Used kalamata olives and balsamic vinegar and olive oil for the dressing. Added some oregano and maybe a 1/4 tsp of the garlic salt and increased the pepper cause that is the way I like it. Healthy and delish. Bravo!

Fried Chicken with Creamy Gravy

We don't eat fried chicken very often but when we do it better be good. I followed the recipe except for brining the chicken for about 4 hrs prior. This makes all the difference in a moist or dry chicken. The seasonings were pretty much right on. I browned the chicken then I finished it off in the oven for about 1/2 hr at 350. The gravy could have been better. I will tweak that next time.

Home-Style Brown Rice Pilaf

Very good! Idid make some small alterations. No mushrooms,no eggs,used toasted pine nuts, and I added one stalk chopped celery. I overcooked the onion. This is a definite in the rotation.

Festive Beef Tenderloin

The flavors blended well together. I did add about a tsp of dijon mustard to the mayo mixture. The beef was done to perfection and crackers added a nice crunch. I would season the beef with more pepper next time prior to the first broil.

Mushroom Chicken Piccata

This was very tasty. The only changes that I made were I used arrow root instead of the corn starch and I did not cook the chicken as long as stated. By not cooking as long the chicken was extremely moist. Very flavorful and a nice change from the regular chicken and mushrooms.

Apple Pie by Grandma Ople

Definitely worth 5 stars. I have been using Ina Gartens pie crust recipe which makes the best crust I have ever tasted. I too have added cinnamon and nutmeg to the apples from our tree. I am not sure what kind of apples they are because the tree is soooo old but they are not real tart. The combination of the sauce and Ina's crust make a winner.

Tuna Noodle Casserole

I searched for a recipe that had more vegetable content and lucky that I came across this one. Doubled the recipe,used a 9x13 pan,did not add the pimentos,less mayo than called for and used yolk free egg noodles. This was exceptional for tuna noodle casserole. Will definately make again.

Apple Banana Cupcakes

Worthy of 4.5 stars. Neither of the fruits outshined the other. A delicate combination. I doubled the recipe. Did not add all the sugar. Used low fat vanilla yogurt as suggested by another reviewer and used canola oil instead of the shortening. Thanks for the post

Mushroom Orzo

This was the first time that I made orzo. I had some mushrooms that I needed to use up so the search is over. I will definately make again. I did double the recipe and added some beef stock instead of the H20. Didn't have any parsley and that was not missed. The added touch of the walnuts gave it great texture. Makes a great side dish or a meal in itself. Thanks for a great way to use orzo.

Perfect Berry Shortcakes

WOW these were awesome! I only used the shorcake recipe and I have to say I will use it again and again. The only changes I made were the following: 1. Only had fat free 1/2 & 1/2 2. Only had unbleached flour 3. Did not freeze my butter (no time) 4. Cut them with a biscuit cutter because I wanted to use my Aussie cutter shapes which made many more than stated in recipe and kept eye on them in the oven. Baking time was about the same. All I can say is these were the ultimate shortcakes. They were so tasty and flaky, again the ultimate! I believe grating the butter makes it flakier and lighter. I will use this method to make my other doughs ie- pies Thank you so much for posting the recipe!

Buttermilk-Battered Calamari

I made these last night for Superbowl and they were delish. The only change I made was to add some cajun seasoning. The secret to any calamari is too NOT OVERCOOK.
