Cranberry Upside-Down Coffee Cake

Reviewed: Nov. 26, 2009
Nice change from pumpkin pie for holiday dessert. I followed the recipe but think that I will add more cinnamon next time. Wonderful taste and textures. I was concerned that it would stick to the pan but it came out fine.

Cheesy Buffalo Chicken Dip

Reviewed: Sep. 24, 2009
I only made a few changes to the recipe but I bet it would have been just as good if I hadn't. Used leftover baked chicken and thigh,1/4 cup of the hot sauce and added a small diced onion and 2 celery sticks instead of one, last but not least did not have any bleu cheese dressing so used all ranch. I would say that the recipe is versatile enough to play around with and still have great results. Thanks for adding another terrific recipe from this site.

Garlicky Green Beans with Mushrooms

Reviewed: Aug. 9, 2009
Altered just a bit. Used 4 cloves of garlic because we love garlic. Olive oil instead of the butter and added a sprinkling of crushed red pepper to taste. Great ingrediants and flavors! Definitely worth trying. Will make again.

Yellow Squash Casserole

Reviewed: Jul. 24, 2009
This is one of the better squash casseroles. I followed the recipe to a tee except used some zucchini and yellow fresh from our garden. Next time (and there will be a next time) I will cut down on the butter to make it a bit healthier. Thanks for a tasteful recipe indeed!

Hummus III

Reviewed: Jul. 4, 2009
This is very good! We love garlic so I have a tendency to add a few more cloves. I also put a bit of cumin in. If it is a little too thick I add some of the bean juice to thin it out. I serve with fresh veggies and baked pita chips. Great base for hummus.

Mexican Egg Rolls

Reviewed: Jul. 1, 2009
HMM still pondering why I can't give a better rating? Perhaps it's just me and the combination of the eggroll wrappers and mexi ingrediants just didn't click. I love testing new recipes. After reading the reviews I decided to add some fresh onion, greenpepper and garlic to the ground beef. I used a taco seasoning recipe from this site as I do not keep it on hand. Served with some refried beans and spanish rice. I felt for all the work it just didn't have enough kick and the eggroll wrappers were not a good combination with the filling mixture. Good idea but I don't think that I will make again.

Caramelized Onion and Horseradish Smashed Potatoes

Reviewed: Jun. 25, 2009
This was ok.. I did find that the vinegar was a bit overpowering so I would definitely cut back on that. I chopped the onions and used fat free 1/2 and 1/2. Would try again with some changes to our taste.

Chicken Fried Chicken

Reviewed: Jun. 23, 2009
The combination of coating ingrediants really help retain the moisture in the chicken. Enjoyed it very much and used the leftovers today on my salad. Will make again with some additional seasonings. Thanks for the post!

Strawberry Romaine Salad I

Decided to give this a try even though my husband is not a big salad lover. Was is he pleasantly suprised? I would say so. My compliments to the submitter. I cut back on the sugar and did not have poppy seeds but did not deter from the taste. Definitely give this a try.

Easier Chicken Marsala

Reviewed: May 4, 2009
This is a definite 5 star dish. Changes that I made did not really impact the quality and superb palate pleasure of each and every bite. I used boneless chicken thighs instead of breast. Added a little thyme to the coating mixture. Sauteed a small red onion and 4 cloves fresh chopped garlic. Lightly brown the chicken and finished everything off in the oven for approx 35 mins @ 350 degrees. Oh and did not use the butter called for. Just OO. Excellent, Excellent, Excellent

Great way to fix salmon. Since my husband is not a big salmon fan I used cod for him with the same coating. Overall, something that I would make again.
