Nat's Shrimp and Veggie Stuffed Zucchini

The combination of ingrediants will leave taste buds wanting more. I used approx 3/4 lb shrimp and used onion instead of the shallot as that is what I had on hand. Will be making again!

Grilled Salmon I

A must try for grilled salmon. The marinade adds to the overall taste and blends perfectly with the salmon. I did use olive oil. Thanks for sharing.

Blueberry Cream Muffins

Delish! I made the following changes: 1. 1 additional cup blueberries 2. 1 cup non fat sour cream and 1 cup plain non fat greek yogurt (cause I ran out of sour cream) Would def make again

Mom's Chicken Cacciatore

Had to change it up a bit as I am doing a "low carb SB thing" right now. No flour, 2 cans of diced tomatoes, 3 large boneless skinless chicken breast, fresh flat leaf parsley to add to the herbs. I had mine as is and my hubby had his with Dream Field pasta and said that it was excellent.. The flavors blended very well and the added fresh herb made a difference which was a positive.

Horseradish Deviled Eggs

These were really tasty. The worcester sauce was a nice component with the horseradish. I used spicy brown mustard instead of the dry mustard. Good recipe.

Jay's Signature Pizza Crust

Makes a good pizza crust. The exterior is crusty and the interior nice and chewy. I did not prebake my crust. Just added the ingrediants to it and slide it onto my pizza stone with the pizza paddle. I have another recipe similar to this one and will alternate and perfect them to our liking. Thanks for the post!

Honey Baked Chicken II

OMG this is one the best chicken recipes that I have tried in a long time. My DH was hesitant to try it but one bite and he was loaded with compliments. Went back for seconds and asked when I was going to make this again. I made just a few of changes. Used boneless skinless chicken thighs. I only used a 1/2 stick of butter and only had zesty brown mustard. I covered the chicken the first 1/2 hr with foil and then removed and basted as directed. The chicken was moist flavorful. If you don't try this recipe it is your loss. OPTIMO!

Orzo and Rice

This was a nice change from regular rice. I did make some alterations to the recipe after reading the reviews. 1. 2 tsp of butter and olive oil to brown the orzo 2. Used low sodium chicken stock instead of the chicken cubes 3. Added some shredded carrots,1 small diced onion,2 cloves of chopped garlic and about 7 medium chopped mushrooms. All of these were sauteed after I browned the orzo. Then I added the rice and stock. 4. Added just a sprinkle of garlic salt and some dried parsley for color. With these changes this is a definate 5 star recipe. Need I say that I will be making again!

Zesty Slow Cooker Chicken Barbecue

I doubled the recipe to take to work for our christmas party. Served on serve and bake rolls that I prepared the night before. I did add some hot sauce to give a little more kick as the bbq sauce was a little mellow. I also defrosted the chicken breast in the microwave and cut them in half before adding them to the slow cooker. This was devoured. Would def make again.

Fresh Ginger Cookies

Absolutely use the fresh ginger. These have made it to my "keeper" file. The fresh ginger and the molasses are a great combo. You won't be disappointed. Followed the recipe to a t.

Slow Cooker Cranberry Roast

This was one of the better slow cooker recipes that I have tried lately. The gravy was the right consistency and had just a hint of cranberry flavor to it. Would make again using other cuts of meat or the round roast which I used to make it with.

Feta and Turkey Stuffed Green Peppers

Great change up from your usual stuffed green pepper. I especially loved the herbs in this recipe. The fennel seed makes a pleasing taste along with the rosemary and the thyme. I did not add the corn and it was not missed. Actually had corn on the side. I used 2 cans of healthy tomato soup and added some steak sauce to that and mixed it. It made a great sauce to put over the peppers.

Walnut Pear Coffee Cake

If you like walnuts and pears I would definitely make this coffee cake. The cake is light with hints of pear and distinctive taste of walnut. We have 2 pear trees on our property which keep us in pears for the winter. Very good recipe! Give it a try.

Nutty Lemon Coffee Cake

Followed the recipe with the exception of using the juice from 1/2 lemon. Next time I will add more as we enjoy the lemon flavor. I baked this in a tube pan which required a longer bake time. I tested with a long wooden scewer about every 5 mins. A small part of the cake still was not done but that is the fault of my oven. This cake is moist with a little crunch from the sugar mix. Just the right balance. Much better than coffee cake from the store. Great recipe! Give it a try.

Rosemary Ranch Chicken Kabobs

I followed the recipe to a T and was not disappointed. Next time I will add some minced garlic to the marinade. The chicken was done to perfection and the taste was very pleasing to the palate. OPTIMO!
