Mexican Bean Salad

Asparagus and Mushroom Quiche

This was delish. I did make a few changes. I only had sliced button mushrooms,added several more pieces of bacon,did not use the egg white wash but did pre bake the pie shell,used shredded swiss cheese with the feta, and added an additional egg as mine were of medium size. I did add some thyme for additional flavor. Good for snack or a meal!

Stuffed Green Peppers I

These were delish. I used brown rice as that is what we keep on hand. Brown rice does take a bit longer to cook so I did precook the rice in the same large pan for approx 15 mins until the liquid ( 1 cup h20-1/2 cup rice) was absorbed than I put the onions and the ground turkey ( another change) in the same pan to cook. Added the tomatoes and other ingrediants,stuffed the peppers and placed the whole pan in the oven. I am always figuring how to use less pots and pans. All the ingrediants including the peppers were cooked perfectly and the taste called for seconds.

Risotto alla Milanese

I did not use the beef marrow and it still was awesome. Worth the effort for "real" risotto as this was my first attempt to make it. I did not take the onions out after sauteing them.

Braised Pork Ragu

This was excellent! I did add a tab bit more seasoning (garlic pepper) and used crushed tomatoes. Braised for approx 6 hrs. Comforting/tender. I did pair this with risotto alla milanese recipe from this site. A match made in heaven!

Blueberry Ricotta Squares

These were delish. I only had a cup of ricotta left and used what I had. It worked out fine. The texture was moist. The blueberries did not sink and overall taste was worth making again. Oops almost forgot, I used the juice of one fresh lemon instead of the lemon extract. Maybe that helped giving it 5 stars!

Beer Batter

I am giving this 5 stars with my additions: Floured the haddock befor putting into the batter. I added old bay,onion powder and some hot sauce to the batter for additional kick. I used a really nasty tasting IPA that my son left us with from christmas this year. When I tasted the uncooked batter I thought it was disgusting and hoped with the frying it would palatable. It sure was delish. I salted the finished fish and shrimp immediately after taking it from the oil. What a wonderful surprise. Thank for the basic recipe, I would def use again.

Mom's Best Pork Chops

Tastey with added spices. I added Old Bay to the seasoning and quite a bit of pepper. I also coated some chicken thighs and a breast with the coating.

Alaskan Cod and Shrimp with Fresh Tomato

Good healthy recipe. Could use a little more spice :)I did use haddock instead of the cod d/t the price. On sale for $ 6.99/lb and the cod was $9.99/lb Simple ingrediants and easy to put together. Thanks for sharing

Spicy Stuffed Squid

I made this for Christmas eve as we had an ethnic theme. This covered the category for portuguese and italian main dish. Next time I will find larger squid as the smaller ones were time consuming and difficult to stuff. My family was hesitant to try them but there were hardly any left. I loved the combination of ingrediants and would make again. Give it a try!

Cheddar Pear Pie

Very good pie. Enjoyed the savory/sweet combination. Followed the recipe as written except I used arrowroot in place of the cornstarch as that is what I keep on hand. Will definately make again :)

Grilled Bacon Jalapeno Wraps

We thought these were going to be too hot but it really depended on the peppers as each have there own heat level. I did add some chedder mix to the cream cheese mixture and some garlic pepper. A little time consuming to seed the peppers. I did wear gloves and glad I did! Overall very tasty and will be a repeat in our house.

The combination of ingrediants will leave taste buds wanting more. I used approx 3/4 lb shrimp and used onion instead of the shallot as that is what I had on hand. Will be making again!

Grilled Salmon I

Delish! I made the following changes: 1. 1 additional cup blueberries 2. 1 cup non fat sour cream and 1 cup plain non fat greek yogurt (cause I ran out of sour cream) Would def make again
