About this Cook
I am a RN who loves to cook and bake on my days off. I love to use fresh herbs and vegetables from my garden if they are in season. Enjoy sharing some of my concoctions with my coworkers, friends and family.
My favorite things to cook
Fresh ingrediants with a mediterranean flair. Love to make pizza's and homemade bread. Experiment with vegetarian dishes.
My favorite family cooking traditions
Making fresh pasta and cookies with my children when they were young. Now I look forward to sharing with some grandchildren the same traditions.
My cooking triumphs
Buffets that I prepared for my son's high school graduations. Not overcooking fried calamari. Able to adapt any recipe to our taste and try to make it healthier.
My cooking tragedies
When I was only 8 yrs old I made my first cake and put the icing in the cake before it was baked.

Lasagna Pepper Boats
These were delicious, especially the sauce. The only issue I had was the cheese melted out of the peppers. I will use a larger pepper next time and there will be a next time. For low carb these are a winner!

Cheesy Creamed Spinach Casserole
Easy/tasty and a great low carb side dish. Maybe the people that had a difficult time with it being too soupy did not "squeeze" all the liquid out of it. I am trying it today with the Knorr mix and a variety of cheeses that were left in the fridge. I ran out of Dry onion soup. I don't see any reason though that you can't add some regular sauteed onion and then some spices/herbs. This is a good base recipe and flavor it to your liking. Thanks for posting!

I finished these off in the oven for an hour @ 350. Very tender and tasty. Low carb and delish! Enjoy
