Oaxacan Tacos

I have not tried this recipe but wanted to give a tip to the person who burned her hands with the jalapnoes. I have found that if you roast them under the broiler in your oven the have a wonderful flavor and do not burn your hands. Simply cut off the top, slice in half and lay them skin side up on a piece or foil sprayed with nonstick spray and them put under the hot broiler(with the rack lowered to the second level in the oven) until the skins are browned and blistered. Remove from the oven and wrap up the foil to sort of steam and soften them. Then peel and seed them, you can then dice or put in the food processor to chop them up. My family loves the flavor of the roasted peppers in their food and it makes it much easier to use them.

Asparagus Cashew Rice Pilaf

My whole family loved this! I made it last week and they asked for it again this week. While it was cooking one daughter said she couldn't wait to eat since we were having this rice again. I forgot to add the cashews and it was still fantastic.

Revolutionary Montreal Salmon Rub

Fantastic! Made this for a friend who was visiting and she asked for the recipe. When she got back home she made it for her husband and he asked where she got it because he said they never have food that good. My husband must have been bragging about it at work because his boss asked for the recipe too.

Annie's Fruit Salsa and Cinnamon Chips

I made the mistake of making this for our neighbor friends and their family and now whenever we are invited to one of their family gatherings (and there are many as it is a very large family) they request that I make this. I love to cook and make a variety of things but this is all they want me to do now! It has been a huge hit everywhere I have taken it even among the kids! The time it takes to chop all of the fruit and bake the chips is more than worth it... thank-you for sharing this great recipe!

My Amish Friend's Caramel Corn

My daughter wanted to bring caramel corn for a youth group movie night so I decided to try this. It was a hit with all of the kids and the leader and for all of the friends we have let have some since.(Only good friends as this is soooo good) I spent all afternoon making three batches but it was so well worth the time! I saw that some of the other reviewers said that it took much less time to cook and that some even said that it burned a bit, I wonder if they assumed that the oven temp was 350 not 250 because it took all of the time and then some for me, but my oven temp is often lower than it says so I upped the temp by 10 degrees and then again by 20 in later batches. I have given the recipe to several friends already. Thanks for sharing!
