Mediterranean Chicken Dinner

this is really good! I didn't do the vacuum seal thing, but i did cook in the oven with the foil (less cleaning!). I stuffed some of the feta and artichokes in the chicken and drizzled some greek salad dressing on top too, so good!!

Zucchini Soup III

This was great soup! My boyfriend even raved about it for a week and is begging me to make it again. I did make some changes, I used diced tomatoes instead of stewed, I omitted the celery and I had to add a can of beef broth and some vegetable broth to make it more soup like. I also made this in my slow cooker (low for 8 hours)then topped with shredded mozzarella and served with rolls and salad. Yum!

Mom's Zucchini Bread

I had an abundance of zucchini from my garden so I decided to give this recipe a try. It turned out great! so dense and moist. I cut back on the sugar, I only used 1 cup and half, and I didn't have walnuts on hand. I think next time I will add the nuts and maybe raisins??

Dill Potato Salad

Yummy! I really hate mayo, so sour cream sounded great!! it was a little bland, but i added garlic, onion, and some other random spices i had in my kitchen and it turned out great!

Foil-Pack Chicken and Artichoke Dinner

this recipe was good, and fast! I have a rice cooker so i didn't bother with putting the rice in the packet. I also added some black kalamata olives and feta cheese. I made the whole meal in 30mins!!

Vegetarian Lemon-Rice Soup

I love the chicken lemon rice soup you find at Greek diners, and I wanted to recreate at home without chicken. Unfortunately, the juice from my 2 lemons was too much - it was way too lemony and sour. My lemons were med to large large in size and very juicy. Unless you have small lemons I would start with one, and you can always add more. Secondly, I had little egg white bits in the soup, which I think was the result of adding the hot soup to the egg / lemon - it just cooked the eggs right away. It didn't bother me, but I know that's not how it's supposed to come out - maybe I will ladle some soup and let it cool off next time?
