Tostones (Fried Plantains)

Delicious! However, when I drained the slices on paper towels, they stuck to the paper and I was unable to peel off the paper from many of them. I fried the plantains in butter instead of vegetable oil...maybe that was the problem - or maybe my brand of paper towel.

Slow Cooker Thanksgiving Turkey

This was so easy and it turned out great. I did not use Worcestershire sauce nor the can of gravy. I had a 6 1/2 pound turkey breast & cooked it on high for 4 hours, then low for 2 hours.

Chicken Rice Casserole

This is your basic chicken rice casserole and it's pretty good. I topped mine with canned fried onion rings for the last 5 minutes in the oven.

Whole Wheat, Oatmeal, and Banana Pancakes

Very good pancakes! I only made a couple of changes to the recipe. I had oat flour on hand so used that instead of processing oatmeal. I omitted the banana and added blueberries. Yum!

Sweet Potato Cranberry Bake

The taste was very good but my casserole was full of liquid in the bottom - very soupy. Maybe I boiled the potatoes too long. I'm not sure. But I would definitely make this again. I just served it with a slotted spoon and everyone enjoyed it.

Streusel Topped Pumpkin Pie by EAGLE BRAND®

This is my new standard for pumpkin pie. Delicious! I used pecans instead of walnuts. When sprinkling on the streusel topping, I stopped after using about 75% of it - seemed enough to me. The graham cracker crust added to the taste in my opinion. A great pie recipe!

Kiwifruit Muffins

The tartness of the kiwi with the sweetness of the raisins make these muffins delicious! I used 1/2 cup whole wheat flour and 1/2 cup all purpose flour and made mini-muffins. They are very fruity and I had just a little trouble getting them to pull loose from the muffin tins.

Butter Flaky Pie Crust

Following the recipe as written, I had flour left over in the bottom of the bowl that wasn't "stuck together" with the butter & ice water. It wasn't as easy to work with as a crust made with shortening but I'm trying to eliminate shortening completely in my cooking so I still prefer it. The crust after baking was a little tough .. almost crispy at the edges.

Granola-Chocolate Cookies

My first tray of cookies came out flat like a previous reviewer described. So I added 3/4 cup flour to the remaining batter. The rest turned out rounded. I took these cookies to work and most everyone liked the flat ones the best! If I make them again, I will add only 1/4 cup flour to the 1 1/2 cups already called for.
