Good recipe. Here's a way to make it even easier. Don't bother peeling or coring apples. Just cut them into quarters or eights. After the apples finish cooking, put them through a food mill. It will separate out the peels and seeds. Plus, it leaves the applesauce with a pretty pink tone.

Hearty Vegetable Lasagna
So much better than expected. I added the basil to the cheese instead of the marinara but otherwise followed the recipe. (I've also made it with grass-fed beef. Ymmm)

Butternut Squash and Turkey Chili
I like the idea of this chili but think the seasoning needs a little adjusting. I added a couple of bay leaves and some oregano and, if I make this again, I would cut back on the cumin probably by half. (One can always add more if it's not enough.)
