Red Velvet Cake

Reviewed: Sep. 12, 2014
Good solid recipe. Made it here in Brazil where the quality of ingredients can vary quite a bit and it still came out great. For what it's worth, I used a small container of Gel food coloring because it is difficult to locate 1 oz. bottles. Came out a nice bright red and good consistency.

Great recipe! I made this for my Brazilian family who rarely try "ethnic" foods. They loved it and have requested it at family meals many times since.

Strawberry Cake from Scratch

Reviewed: Aug. 4, 2014
I'm afraid I did not have much success with this recipe. I did follow instructions exactly, but the cake came out gummy despite increasing the cook time by an hour. It could well have been an error on my part and/or a difference in the quality of ingredients as I am living in Brazil.

Pumpkin Pie Bread

Reviewed: Aug. 3, 2014
I am writing this review after having tasted the bread a few hours out of the oven. Per instructions, it is best the next day, so take this with a grain of salt. I did make one change, substituting the 3/4 cup water for 3/4 of pumpkin puree, and I used homemade puree. I thought the bread was OK. It was moist; pretty much all breads of this type are. The flavor was missing something in my opinion. Dunno, it just didn't come close enough to pumpkin pie to warrant the label. I've made a ton of pumpkin bread recipes. This one comes somewhere in the middle.

Quick Coffee Cake

Reviewed: Aug. 25, 2013
As almost everyone else here, I added an extra 2/3 cup sugar. I also doubled the amount of topping and halved the flour ratio for the topping. That said, this recipe was top-notch! Definitely make it again. Super easy and super-fast.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Jan. 16, 2012
It is a good recipe. I made it without the onion powder, because I had none on hand. Also, I applied the rub and started baking it right away due to time constraints. Still, delicious. The kids liked it as well.

English Baked Potatoes

Reviewed: Feb. 24, 2010
Simple and delicious, and healthy. I'll be making these again and again. For what it's worth, I was preparing another dish with this (Crispy Coconut Chicken Fingers) and thus needed the oven @ 450. I placed these on the lower rack and followed the above instructions otherwise...including cook times. They came out great and were not overdone.

Bourbon Street New York Strip Steak

Reviewed: Feb. 15, 2010
I reduced the brown sugar and whiskey by more than a half and still found the recipe too sweet and the bourbon overpowering. This recipe was not my thing.

Pan Seared Ahi Tuna, Baby Beets and Watercress Salad with Ginger Vinaigrette

Reviewed: Feb. 11, 2010
We've just experienced a snowstorm and, the store being low, I had to substitute baby spinach for the watercress. I prepared the recipe exactly in all other ways. The vinaigrette was suprisingly subtle when paired with the beets. I liked this one. I'll make it again.

Grandpa Crotts BBQ Sauce

Reviewed: Feb. 6, 2010
This recipe was a bit too tart for me as it stands. I added about 5 tbsp. brown sugar and 2 tbsp. molasses. Wasn't bad with the additions.

Szechwan Shrimp

Reviewed: Feb. 4, 2010
Very good. I was amazed at how well the sauce turned out with just a few simple ingredients. I will make it again. In my opinion this recipe doesn't come into it's own without the addition of at least one veggie. I added broccoli.

Erin's Indonesian Chicken

I used a bottled peanut sauce because it was in the pantry. That said it's hard to give this a completely fair review. It was good enough that I'll try it from scratch on another occasion.
