Classic Carbonara with Pancetta

Chef John's Easy Apple Pie

Perfect and easy. I only subbed golden delicious apples and made a little extra sauce for dripping over the ice cream we served along with it. Mine took 50 minutes after lowering the temperature-probably b/c of the cookie sheet I put underneath to catch the drippy overflow.

Southwestern Chicken and Rice Casserole

Everyone loved it. Toddlers and husband asked for seconds. It did take about 15 extra minutes cook time. It doesn't look pretty, but, it tastes great.

Oatmeal Peanut Butter Cookies

Very rich. Used sunbutter for daughter it peanut/nut allergy. Sprinkled a bit of sugar on top right out of the oven. I will add a bit more oats next time.

Bacon-Wrapped Jalapeno Poppers

Excellent. Be sure, especially if you are using fresh garden hot peppers, to wear gloves while you prep! I used bagged mexican four cheese shreds with the cream cheese and added a dash of garlic salt. Bacon definitely needed to be cut into thirds to cook properly. Took about 20 minutes for our smaller jalapeno peppers. Overall time was about one hour, so, you might want to make ahead and refrigerate until ready to cook to time them for a party or football game.

Chicken Cordon Bleu II

Best Chicken Cordon Bleu ever! This is what I would consider a little more of an advanced dish. But, if you follow the directions--including the note to pound the chicken into thin pieces (about 1/2 inch thick)--you can't go wrong. This is a special occasion-worthy meal. Overall, with the chicken pounding, it took me about 2 hours to get the whole meal done. I will be making it again, this time for guests!

Easy Batter Fruit Cobbler

Great simple recipe. But, I would say that it is not appropriate for sweeter or riper fruits. I used fresh blueberries and thought the batter was just a little too sweet to suit them. Now, if I had added a tart peach to the mix, it would have been perfect. Also, I saw lots of folks complain about mushiness. I believe the problem is that they aren't cooking the cobbler long enough. Mine-amounts as recipe states-took about 70 minutes before it was properly bubbling fruit and browned batter. Don't take it out too early or it certainly will be mush. Mine was too sweet to pair with ice cream, but, went great with whipped cream. I would think this would be a five star if you stuck with peaches/plums/pears or even less-ripe strawberries. Update: used same recipe with peaches and blueberries this time. It had to cook about 90 minutes to get to the right consistency. Although the taste was still great, it did not store as well as the blueberry-only version.

Yellow Squash Casserole

Fantastic! I only added a bit of extra squash, crackers, and cheese to make it a little firmer. Also, I followed the advice of another reviewer and cooked most of the squash tender as the recipe calls for, but, kept some of the squash raw until it went into the casserole dish. This made for a nice mixture of texture and prevented mush from happening. Be sure to cook to a light/med brown top. This has to be one of my favorites so far.

Meatball Nirvana

Awesome! Added red pepper flakes instead on hot sauce, they were still awesome. Oh, and, I soaked my breadcrumbs in the milk before adding them to the meat. That keeps the bread from drying out the meatballs.

Beaumont Ranch Potato Salad

Loved it. I used Olive Oil mayo instead of reg-at a lesser amount. And, I used real bacon. I agree with the others-adding the dressing to the warm potatoes then letting them cool before adding the other ingredients really improved the flavor. Good tip! I did add sea salt and pepper at the step where the dressing was added to the warm potatoes--a tip I got from a cooking show. Yummy Yummy!

Daria's Slow Cooker Beef Stroganoff

Absolute favorite crockpot recipe. Like others, I add a little here or there-for instance, I used more beef today, so, more moisture was released and I needed another tablespoon of flour to thicken. But, there really is no messing this up. My entire family loves it including 2-year-old twins. Be sure to use a dryer wine. You won't want to put a sweet wine in this recipe. We serve it over No-Yolks extra wide noodles with butter. It is always a hit.
