Cake Balls

Reviewed: May 22, 2010
These completely failed.. The "dough" mixture was way too moist, and I couldn't get them to hold together long enough to even dip in the chocolate. I saw all the other reviews, and I followed the directions to the letter, I'm not sure what happened.

Butterscotch Deluxe Pie

Reviewed: Feb. 8, 2010
This was fantastic! I was snowed in with almost nothing left in the kitchen, so this recipe was perfect. The filling came together quickly and much more smoothly than I would have thought possible. This is definitely a sweet one, but pretty amazing if you're in the mood for something sweet!

Lemon Horseradish New Potatoes

Reviewed: Jan. 8, 2010
So delicious! I actually used a pound of wax beans instead of potatoes (less carbs) and kept everything else exactly the same. This couldn't have been any easier, I just melted the butter on the cookie sheet and mixed everything else into it!

Cuban Black Beans II

Reviewed: Nov. 27, 2009
I found this recipe really bland, and it took about three times as long to cook as it should have. I soaked the beans overnight, cooked them on high in a crockpot for 3 hours, and it still took 3-4 more hours on the stovetop for them to cook. The results were unremarkable, but they were pretty good on top of nachos.

Toffee Caramel Squares

Reviewed: Nov. 27, 2009
The crust came out really dry and floury for me, but the caramel layer was pure gold! This is the easiest caramel recipe I've ever used, and it set up perfectly.

Tomato Cucumber Salad II

Reviewed: Apr. 21, 2009
What a delicious easy salad! I did make a few changes, I omitted the garlic (I just don't like garlic), added a few tablespoons of tarragon vinegar, and a tablespoon of sugar. I also added a few sprigs of chopped dill, it really complimented the flavors. I'm sure I added more mayo than the recipe calls for, but honestly, you can't really have too much mayo :) Great easy summer salad!

Irresistible Irish Soda Bread

Reviewed: Mar. 17, 2009
So easy, and absolutely delicious! My only problem was filling the baking pans too full.. this recipe gets real height, only fill the pans 3/4's full or less! Ohh and only taste the batter if you want to eat a dangerous amount of it ;)

Armadillo Eggs

Reviewed: Mar. 12, 2009
These were so delicious! I kept the jalapenos whole and used a melon baller to clean out the seeds.. I'm on the look out for a smaller spoon, the melon baller was a little too large. I added shredded cheese to the sausage mixture and ended up filling the peppers with cream cheese mixed with a ranch packet. Delicious! Ohhhh and these make a rockin' sandwich the next day!

Jalapeno Poppers of Champions

Reviewed: Jan. 6, 2009
I actually made it with the soy bacon, and it was good, but just not that exciting. Just like I thought it would, the soy bacon crisped up really fast and was easy to use. Like another reviewer, I baked the poppers for the first half and then put them under the broiler to crisp the tops. I have to say, I thought this recipe was really bland. I ended up making a few changes. First, I did a mix of peppers, and found that we liked the wax (or banana) peppers the best. They were a little sweeter and added a great flavor. I also used reduced fat cream cheese and added garlic powder, black pepper, and grill seasoning. Next time I'll either add more spices or throw in a packet of ranch mix to get some more flavor. These might be better with some kind of dipping sauce too, I was just trying to keep it healthy.

Lavender Shortbread Cookies

Reviewed: Dec. 15, 2008
This was a quick, easy, and delicious shortbread recipe! I did change a few things in the recipe; I didn't add any mint, I substituted dried lavender for fresh, and I added about a teaspoon of extra lemon zest. I rolled the dough into a log, wrapped it in wax paper, and let it cool in the fridge for about an hour before using dental floss to cut each cookie. The finished product was rich and lemony with just a little hint of lavender every now and then. I will definitely make these again, next time I'll probably add even more lemon zest and try another type of flower or herb (maybe violet).

Creamy Mushroom Soup

Reviewed: Oct. 20, 2008
This was a really easy and tasty! The store didn't have any shitake mushrooms, so I ended up using the same quantity of button mushrooms instead. I did find that 2 tablespoons of flour wasn't nearly enough to thicken the soup though.. I added around a half a cup and it came out creamy and delicious! I also omitted the cinnamon and added a few shakes of grill seasoning for a nice savory flavor. I sauteed 4 more shallots in about a half a cup of butter, spread the mix on thick pieces of sourdough bread and put them in a 400 degree oven to make crunchy croutons to dip in the soup :) Awesome!

Easy Slow Cooker French Dip

Reviewed: Oct. 15, 2008
The flavor of this sandwich was amazing, and it was really easy to prepare! I added a few pieces of cheese to the sandwich right before serving, and it really made them rich and amazing. My only problem with this recipe is the cost.. Even though it's under budget cooking, the meat to make this recipe alone was almost $20! You can't blame the recipe, but this is going in my "special sunday dinner" file ;)

Ham Broccoli Braid

Reviewed: Oct. 7, 2008
This was a HUGE hit at my house! I made a ton of alterations though (sorry person who made up the recipe!): I added a half a cup of sour cream I subbed grated raw milk cheddar for the swiss and added a little Parmesan as well I omitted the ham (my sister only eats meat on the weekends, don't ask) I added an entire leek very thinly sliced I forgot to add the mustard.. oops! I omitted the parsley (I didn't have any) and added a little grilling seasoning and some black and red pepper instead I bought one of the microwave steam bags of broccoli so the broccoli was fully cooked when I put it in the oven.. because the leeks were so thin, they came out very slightly undercooked, but still nice and mild. I'm sure the original recipe is awesome too, I was just in a hurry and added what I wanted. It came out really well :)

Award Winning Soft Chocolate Chip Cookies

Reviewed: Aug. 14, 2008
These cookies were FANTASTIC! I made a few changes, but kept the basic measurements the same: *I added one box of chocolate pudding and one box of butterscotch *I added big chunks of chopped 60% cacao instead of the chips. I think I added 4 bars in total (I mixed half expensive and half regular Hersheys, but I'll splurge and only get the good stuff next time!) *I added one bag of butterscotch chips in place of the nuts. The butterscotch gave the cookies the most fantastic toffee flavor, these are a keeper for sure! I made these cookies for my tattoo artist and his shop mates, and they swooned more than big tattooed guys really should over them ;)

This has quickly become a holiday favorite. The crispy top tastes like a hush puppie, and the creamy inside is delicious and satisfying. Thank you for a great recipe!
