Easy Polenta with Tomato Sauce

I made this for my roommates and they loved it! I used skim milk, reduced-sodium chicken broth, and only 1/3 cup of cheese or so, and it was still delicious! The tomato sauce on top also gave it great flavor (I used Classico Tomato & Basil).

Simple Tuna Melts

The jalapenos and cheese taste sooo good with the tuna! I used whole wheat bread and left out the onion (first time I made it I left it in, and it was too strong, plus I'm just not an onion fan). I toasted 1 slice of bread first, then added the tuna, jalapenos, and cheese on top and put it in a toaster oven while the other slice of bread was toasting. (if you use a toaster oven and don't toast the bread first, the bottom slice will be a little soggy). Soooo good!

French Toast II

My first time making french toast (hey, I'm a college student) and it was pretty good. I used Egg Beaters, skim milk, and whole wheat bread. However, either "saturating" the slices or using medium-high heat caused it to cook on the outsides and stay soggy on the insides. I'm not picky so it still tasted fine to me, but next time I'll just dip each side instead of soaking and use medium/medium-low heat.

No Crust Strawberry Pie

I couldn't find 2.1-oz packages of cook & serve pudding and .6-oz packages of strawberry jello, so I had to improvize and estimate. Also, I didnt use sugar-free versions (as a college student, I bought the full-sugar versions because they were cheaper). Maybe that's why, but mine did not turn out Jell-o like at all, more of a slimy liquidy texture. I even let it sit in the fridge overnight. Doesn't taste that bad, but was hoping for a more jello-like dessert.
