About this Cook
My primary "job" is graphic designer and storekeeper at and My husband, Jim, is a writer/historian and his research has taken us all over this country - it's been a blast! Working at home does have its downside, however, like proximity to the refrigerator and ability to wear stretchy pants. Needless to say, the weight crept up on us and before long, we realized that we were - gulp - FAT! In September of 2010, after seeing a PBS special with Dr. Neal Barnard discussing the effects of a plant-based diet on your overall health, I decided to ease (OK Force) us into a vegan diet. Creating a vegan ice cream - Peanut Butter Fudge - that tastes as rich and creamy as any premium ice cream! (I'm not kidding - give it a try!)
My cooking tragedies
I've had TONS of cooking tragedies over the years - especially when I decided to go vegan, but I don't let them stop me. Every "tragedy" is an opportunity for me to learn a better way to do it. When I wanted to create a vegan ice cream, I tried whipping frozen bananas in my food processor... so many vegan bloggers said "oh it's sooo good, it totally feeds my ice cream craving" - yeah RIGHT! It's like eating frozen slime!! But, it got me thinking and experimenting and now - wow! We make some KILLER deserts!

J.P.'s Big Daddy Biscuits
Incredible!! Like some others, I swapped butter for the shortening and used 1/2 cup of wheat flour...but man-o-man these are tasty and fluffy with just a touch of crisp on the outside as you bite in! DO only use as much milk as needed (I ended up with a few tablespoons left over) DO NOT mess with the dough too much -- that will ruin even the best recipe! Thank you John for a wonderful recipe! :-)

Pecan Sandies
I used these for my holiday goodie gifts and everyone just went nuts!! I'm afraid I won't be able to go back to store-bought now... :-P

Extra Easy Fudge
This is a WONDERFUL base recipe for quick and yummy fudge! I used dark chocolate frosting and peanut butter chips and swirled in a bit of marshmallow cream -- it was a huge hit for the holidays!! :-)
