Eileen's Meatloaf

Husband and kids thought this was very good. I don't really like meatloaf so it's hard for me to personally judge, however, it was definately better than most meatloaves I have tasted and had a good texture. My slight changes: added ground pork, 1/2 pack of ranch dressing mix (based on users who added ranch dressing) and I used plain bread crumbs because that's all I had. I did also put ketchup on top toward the end (more for appearance) and served with mashed potatoes and beef/tomato gravy. It smelled wonderful while it was in the oven. The cook time/temp were perfect, but I don't think 12 servings is accurate...that's only 1.5 ounces of beef per person. Good recipe!

Scalloped Potatoes and Onions

Delicious! I had to up the cooking temp to 375 in order to make a dinner-deadline...added some crumpled bacon, shredded cheese and chopped green onions after uncovering for the last 5 minutes. This is my new fav potato recipe!

Balsamic Roasted Red Potatoes

I changed the recipe just a bit based on what I had on hand but the potatoes were excellent! I used peeled white potatoes, sweet onion instead of green onion and I forgot to add the nutmeg. Texture, taste and appearance = 5 stars!

Bacon-Cheddar Deviled Eggs

Very good! I added finely diced green onion as a garnish on top of the eggs...next time I will add them to the yolk mixture as well.

Amy's Barbecue Chicken Salad

Excellent,restaurant quality salad. I mixed the cilantro, beans, corn and tomatoes in a bowl and served the leftovers as black bean salsa (added red onion,lime juice and course salt. Very good and easy to throw together.

Taco Pie

This is really good! I did take the advice of some others and added a layer of refried beans just because I really like beans. I also added garnishes of diced tomatoes, sliced green olives and chopped green onions on top of the finished dish which made it look very appealing. The leftovers heated up nicely.

Reduced Fat Potato Soup

I love this potato soup. Super quick and easy! The garnish of bacon, green onions and cheese really tops it off. I usually stir a little cheese into the soup.

Never Enough Green Bean Casserole

Popcorn Salad

I liked this and my husband did as well. Our kids, surprisingly, didn't care for it. No chives on hand so I used green onions instead. I'll probably make this again for a potluck or summer BBQ.

Raspberry Cheese Spread

Though I had my doubts as I was mixing this cheeseball together, it turned out great! A delicious blend of sweet and savory. I couldn't find 'seedless' raspberry preserves so I used Smuckers' Seedless Raspberry Jam instead. I will be adding this recipe to my appetizer repertoirre!

Zesty Slow Cooker Chicken Barbecue

Very good...very easy! I like many other reviewers added a little liquid smoke which gave the chicken a nice "outdoor BBQ" flavor. Otherwise I kept the recipe the same. Don't worry about it being too saucy. My chicken breasts looked like they were swimming in the sauce until I shredded the chicken and added it back to the sauce. The chicken absorbed the sauce and it was perfect!

Chinese Cabbage Salad

I have made this recipe several times and it is always a hit. I use less margarine to brown the noodles and then I drain them on a few paper towels. That process absorbs quite a bit of the fat and also makes for crispier noodles. I've also used plain white vinegar if that's all I have and the dressing still taste great. Like some other reviewers, I keep the dressing, noodle mix and cabbage separate until ready to serve.

Egg Fried Rice

I used green onions, sliced mushrooms and peas and left out the green beans. Quick, easy and pleasing! I served the rice with the "Sweet & Sour Chicken I" from this site. A delicious meal.

Sweet and Sour Chicken I

This is one of the very few recipes that I didn't alter in any way. I did double the recipe to feed a larger group though. The results were amazing! Thanks to another reviewer's post, I paired the Sweet & Sour Chicken with the Egg Fried Rice from this site. What a delicious meal!

Bean Soup With Kale

My changes: Used less garlic (about 4 cloves), used great northern beans and canned diced tomatoes because I had them on hand. I also added diced turkey smoked sausage and sauteed it with the onions, garlic and also some grated carrots. My changes were based on what I hand on hand and to meet my personal preferences, but I think this would be a great recipe even with no changes.

Stuffed Pork Chops I

I made some of the recommended changes; browned seasoned chops first, sauteed onion and mushrooms. I wish I'd had time to let it bake longer to get more tender chops, but it was still quite tasty. Served with mashed potatoes and sucotash.

Spaghetti Pie III

My family thought this was pretty good. My few changes were: used italian sausage with the ground beef. Also added a layer of ricotti and added half the sour cream mixture to the spaghetti. Topped with a mozerella cheese blend. Tasted even better the second day as leftovers.
