I didn't have any confectioners sugar, so I used granulated and added an extra 1/4 cup cornstarch. The result was absolutely delicious - crumbly, buttery, melt-in-your-mouth good.

Shrimp Scampi Cheesecake Appetizer

VERY tasty, although I have to admit that I did season w/ every step rather than just waiting until the end to add salt. I also used phyllo cups as I was making these as appetizers for a party. I used 2 lbs. shrimp and only 8 oz. gouda and it tasted great. It makes a LOT - I probably only used 1/3 of it to fill 45 phyllo cups. I did, however, simply bake the rest in a 9X7 casserole and it worked perfectly - I just baked it til the top browned a little and it was great w/ crackers.

Baklava

This was my first attempt at baklava and it was a great success! I did follow the advice to make a bigger batch of syrup and to chill the syrup before pouring it over the hot pastry, and it turned out very well.

So good and so surprisingly easy! I did make a double batch of filling and use some to frost my cake - it just added to the presentation and, after all, you can never have too much chocolate whipped cream. It was a huge success at my Christmas Eve dinner.
