Little Meat Loaves

I followed some of the other reviewers suggestions and used shredded cheese. I also added a little more italian seasoning. I cut back on the sugar, and used a mix of bbq sauce and ketchup for the topping. Tasted great. My 15 year old daughter, who claims not to like meatloaf, liked it. It's always helpful to read the reviews for ideas! Thanks everyone :)

Angel's Old Fashioned Beef Stew

Great tasting. This made more than I thought. But the left overs are great. I added some frozen peas near the end of cooking. I'll do this again.

Mexican Shepherd's Pie

I made this with approx. two pounds of lean turkey burger instead of beef. Also used two packages of corn bread. Tasted great, the whole family loved it. Next time I'll add a bean of some kind and maybe add some cheese under the corn bread too. I'll make this one again for sure!

This was a hit with my family. I had bought a cheaper cut of spare ribs that were ok, next time I'll spend the extra for a better cut and it'll be great. Lots of sauce, I saved it and will use it for something soon. Enjoy:)

Blackened Tilapia with Secret Hobo Spices

Scalloped Sweet Potatoes and Apples

This is a very interesting dish. Could either be a side or a desert. I parboiled my apples like another reviewer did. This was very, very good. Three of us for dinner almost devovered it all.

Sweet and Sour Meatballs II

Very good, everyone loved it. I used two pounds of lean ground turkey and one pound extra lean ground beef. Next time I make this I'll cut down on the sugar. It was kind of sweet.

Easy Chicken Enchiladas

Very tastey. I used enchilada sauce instead of salsa. (that's all I had on hand). I poured some sauce over the top before baking and I put the cheese on about the last 5 minutes of baking.

Cabbage Roll Casserole

My whole family loved it. I made it with ground turkey. I also added a little garlic powder, extra onion, and some mrs. dashes spices. It was very good, just needed some more seasoning of some type to give it more "BAM". I'll make again and try some more seasoning. Another reviewer mention Prego sauce, that does sound like a good option. Watch out, this recipe does make a lot!

Best Carrot Cake Ever

This sure lived up to its name. I made it for an Easter meal with friends. Everyone loved it. I layed the cakes and used the Cream Cheese II frosting recipe with real cream cheese. I shredded my carrots in a food processor. This was and awesome cake. I can't wait to make it again.

Jimmy Dean Three Pepper Sausage Corn Cakes

We're not into real spicey food, so we left out the peppers, and we used the mild sausage. Next time I'll try using a sausage with a little more spice. Kids loved them too.

Barbecue Ribs

I've only made these once and they were a hit with my family and our friends. I will definetly make these again. I may try cutting down the brown sugar by half. I did boil my ribs for about an hour and a half. Try this one...you'll like it.

Beef Tips

I used a jar of gravy rather than a mix and used a little less of the soy and Worcestershire sauce. And it was still a little to salty. Very tastey though. Will make again if I can cut the salt but keep the flavor.
