"Pantry Raid" Chicken Enchilada Casserole
We made this last night, and since it was "pantry raid" that is what I did, I used 1 can rotel tomatoes and 8 oz can of tomato sauce. i also added 1 drained can of corn. I made my own taco seasonings from a recipe on this site. The rest I pretty much did as written. Husband loved it. such an easy recipe to change to whatever you have on hand. Thanks for sharing it mama411.

Crunchy Oven Fried Tilapia
I made this tonight for me and my husband and we both really liked it. I did as others had suggested and added old bay to the fish, the flour and the breading. I also put a cooling rack inside the baking sheet and cooked the fish on that so that both sides got crispy. I did turn the fish about halfway through and did a quick broil the last couple of minutes. This was the closest to fried fish without frying that we have ever had. tks for sharing!

Amazing Pork Tenderloin in the Slow Cooker
Husband made this for us tonight. It was really good. He did as others suggested and used chicken stock instead of water, browned the tenderloin before adding and left out the soy sauce and used real onions instead of the onion soup mix. The smell of it cooking nearly drove us crazy. We will be making this again soon. Would of given it more stars, but since he changed it so much, I do think it would of been pretty salty if cooked per recipe.
