Lemon-Pepper Salmon II

i made this in the oven, 400 degrees for 20 minutes, covered w/foil. excellent! very juicy and sweet! a big hit with some very fussy men.

Potato Latkes I

These are so easy!!! No "knuckle blood", because I used the 20oz bag of Simply Potatoes Shredded Hash Browns, all three eggs, one "board" of matzoh, crushed, and 1/2 small boiling onion. Make sure you use enough salt (make a sample latke before doing the entire batch). These are awesome! My dad, who is extremely fussy, declared these "excellent, the best I've had in years!"

Turffaloaf

i made this w/1-lb buffalo, 1/2-lb turkey, and left out the dill dip. i used 1-1/2cups breadcrumbs. even my dad and uncle, both rather fussy, gave it rave reviews! (just be sure to really mix the meats together well.)

Fabulous meatloaf! Nice and moist, but firm. I made the dish with 1-lb ground beef and 1/2-lb ground pork. Can't wait to try it cold in sandwiches!

Amazing Chicken

excellent basic recipe! i mixed a generous dose of garlic powder in with the fat-free mayo, then added parmesan cheese to the italian breadcrumbs. i also butter-sprayed (pam) the top of the chicken breasts once they were in the baking pan. i can see using this as a basis for chicken parmagiana, among other recipes. thank you karrie!

Chris' Bay Area Burger

are there any more than 5 stars possible? these are incredible! i made them on my george forman grill, making them 1/4lb each. 4 minutes and they were perfect! i can imagine using these burgers as salisbury steak! yum!!

Blenty of Blintzes

i grew up on blintzes. this is much easier. i would drop the salt from the cottage cheese mixture and add 1-2T sugar instead. and cinnamon, of course! this is somewhere between a blintz and lokshen kugel. yum!!

Best Ever Split Pea

wow! this is wonderful and easy split pea soup! i would not puree it next time, though. also, don't worry if it doesn't look like there's enough liquid half-way through. it will get there. i added diced baked ham during the heat-through.

Triple the Ginger Cookies

these were easy to make. i peeled the fresh ginger with the bowl of a spoon, and used the kind of chopper you pounce on with your hand. i cut the crystallized ginger with a knife. but here's why i only rated it 2 stars: it took more than an $8 bottle of crystallized ginger to make the recipe, and the results weren't worth it. sorry. also, if you don't use a really good baking sheet, the cookies fall apart when you try to remove them (i had two different types of sheets). i also substituted whole wheat pastry flour for the white, which added a "wheatena" crunchiness to the batter. won't be adding these to my christmas list, though.

Three Ingredient Peanut Butter Cookies

this recipe is perfect for someone with celiac's disease! i made these for a friend at work, and everyone else devoured them. my friend appreciated my thoughtfulness (everyone else just appreciated the cookies), as her food choices are severely limited now. but these are definitely a keeper!

Chocolate Peanut Butter Cup Cookies

these are incredible! they simply melt in your mouth (i used crisco). i gave some to a restaurant owner/chef friend of mine. he declared them "excellent". i brought these into work...they disappeared in about an hour. even better the next day (make them the night before you need them). definitely on my christmas cookie list!

Ultimate Double Chocolate Cookies

These are the most wonderful chocolate cookies I have ever tasted! Incredibly adult, they melt in your mouth. Positively addictive. The batter is stiff, and I made small, bitesize morsels, but that only makes them last longer (I wish!). Great with a glass of cold milk!
