Blackened Prime Rib

Supurb flavor!! I used a 7 lb roast and added 2 Tbsp garlic powder to chili powder and blackened seasoning. Also, I added a cup of wine to the 2 cups of water in bottom of pan, which enhanced the flavor of the au jus. Will probably use chili powder with a little more "zip" next time for added spice (used mild this time). Final note: Pull your roast just before you think you should, then let it sit as recommended. Meat keeps cooking even after it's removed from oven, and you can always cook longer if it's too rare, but you can never uncook it. Overall, this is a must-try if you enjoy flavorful, delectible prime rib!!

Southwest Style Turkey Casserole

This is a favorite in our house. I now make this dish regularly with either chicken or turkey meat. I now combine chopped green onion & cilantro with meat and I add a dash of cumin and chili powder to the soup/sour cream/salsa mixture. Then I layer as directed, pile on extra cheese & bake as directed. It's easy to make in advance & bake when ready...perfect for bringing dinner to a sick friend. Mmmmm.

Peach Pie the Old Fashioned Two Crust Way

Disappointing. It didn't taste like peach pie with all the nutmeg & cinnamon...more like apple pie. Also, way too runny, even after following other reviewers' ideas to minimize liquid. I will try another recipe next time.

Fajita Marinade I

I've tried dozens of fajita marinades & this was by far the best. Marinade itself didn't smell great, but once the meat was on the grill there was no question this was a keeper. Equally delicious on steak & chicken. Thanks!

Curried Beef with Winter Vegetables

Great flavor and wonderful seasonings but I made a lot of revisions. First I used 2 pounds stew meat rather than 1/2, and I didn't boil the beef, I dredged it in seasoned and browned it, then set it aside. I omitted parsnips (what are parsnips anyway?) and zucchini. Rather than go through the whole roasting pan ordeal, I dumped the browned beef & 1 can of beef broth into the pot with veggies, added a cup of water put the lid on & simmered for about 1 1/2 hours. The only change I will make next time would be to add the apples about half way through, because they were a bit soggy after cooking. Other than that, it's DELICIOUS! Wasn't too spicy for my kids either.

Thai Ginger Chicken (Gai Pad King)

Only thing wrong with this recipe is there's never enough leftovers! I double it now to keep the hubby happy. I use a little less red bell pepper than called for and used Thai Red Curry paste rather than the chili paste (just what I had in the fridge) The prep is time consuming, but well worth the end result. Can't recommend it enough!

French Beef Stew

I didn't find anything worth raving about with this recipe. I followed recipe to the T & found the flavors mild, meat tough and potatoes mushy. I was hoping to find my next favorite stew recipe based on the other reviews, but will have to keep looking.

Home-Style Minestrone

I made this according to recipe, but after tasting, found the broth bland and the consistency thin. To remedy, I added 14 oz can of tomato juice, 1/2 tsp EACH marjoram, oregano, basil, onion powder & paprika, and a dash of cayenne & tobasco. I simmered it another 15 minutes with the seasonings and it was delish. I also swapped kidney beans for cannellini beans, used a teaspoon of dried thyme rather than a tbsp of fresh it called for and added some frozen green beans. Good soup with a little tweaking.

Pear Honey Cranberry Sauce

Delightful! So easy to make. I boiled the sugar & water, then dumped everything in together. Thanks to other reviewers, I used half the honey, a pint jar of pears I canned over summer, orange juice & zest, and a tablespoon of Triple Sec. Simmered 10 minutes & perfection! I LOVE the taste of orange & cranberry together! YUM!

Roasted Herb Chicken and Potatoes

I love this marinade. I've made it many times as written, but last night I used the marinade on barbecued chicken and it was awesome. I quartered the bird, brushed the pieces with marinade & threw them on the grill. I brushed each time I flipped the meat & the results were amazing. The skin crisped up really nicely and it was juicy and delicious. Highly recommend this recipe!

Meatball Nirvana

Best meatballs I've ever made. I omitted the spicy stuff on account of my wimpy kids, and had to use seasoned breadcrumbs because the plain ones were stale, but the flavor of these was amazing & totally complemented the spaghetti sauce I made. I'm permanently replacing my old yucky meatball recipe with this one!

Millie Pasquinelli's Fried Chicken

The best fried chicken I've ever made! I skinned the chicken pieces and soaked them in buttermilk first, then drained them before the first layer of flour. Followed the remaining directions exactly. Chicken was moist, tender and perfectly done on the inside, crisp and delicious on the outside. Thanks, Ms. Pasquinelli!
