I would agree with many, in that there is just 'something' missing..... it could have been the fenugreek, which I forgot to get as per other's suggestions? But despite 'something' missing, it was still delicious.
I made some changes. First, I put all the spices in a hot pan to let them mature. To that, I didn't use any veg oil, only add grass-fed butter and onions/garlic, then pan seared my chicken in that. I OPTED for bone-in chicken thighs instead of boneless. I added about 1.5 teaspoon of cayenne for some heat, and was about the amount of spiciness I like. I added the yogurt right before serving. For the Cardomon pods, I put them in the net that garlic cloves usually are packaged in and tied a knot, so that it would be easy to remove them at the end.
I served over rice, garnished with cilantro, and accompanied by Roasted Curry Cauliflower and Jiffy Cornbread.
I would say it is VERY important to ADD SALT and taste and re-taste until you get it right!!! Otherwise it will be VERY bland. Salt REALLY made the flavors come alive.
I look forward to trying this again with the fenugreek I forgot to get per other's suggestions.
