Spicy Chipotle Turkey Burgers

i LOVE this!! I am trying to eat healthier and have some food allergies, so I skip the cheese and bread. I make these burgers, then top with homemade guacamole and wrap with lettuce. SO delicious, healthy, and flavorful. I've made them for several friends and family, who love them, too. Thanks for sharing this recipe!

Potato Pancakes II

Delicious!! I read several of the reviews before making my batch. I needed to use up some leftover mashed potatoes. They were lightly seasoned, so I added in plenty of cheese, green onions, bacon bits, a touch of minced garlic, and a tsp of salt. I also added in 3T of Gluten-free Bisquick, as recommended by many reviewers. I used a large skillet, 2T butter to sautee the pancakes. I formed the pancakes by hand and smooshed them down a bit. It made about 8. I cooked on medium heat for about 5-8 minutes on each side. They were perfect! Crispy outside, warm and creamy inside.

Original Homemade Italian Beef

i LOVE this recipe!! I've made it several times, so at this point, I have started to make a few adjustments based on my own tastes. I prefer sirloin roast, b/c I hate beef fat. It's usually lean enough, but I trim it if necessary. Instead of water, I use beef broth and red wine. I also add a couple of garlic cloves and a sliced onion to the liquid. I also apread some of the Italian seasoning into the meat before I put it in the crock pot. When it's cooked through, I pull it out and shred it with forks, then put it back in the crock pot and pour in 1/2 of a jar of pepperocinis. When I used a whole jar, the juice was too spicy for me, even though the meat still tasted fantastic. I like the roast aus jus to keep the meat moist. After about 30 mins of additional simmering, it's ready to serve.

Wow. Amazing recipe. I'll never use another one. Follow the recipe exactly and take the time to sift the powdered sugar/cocoa powder. YUM!

Baked Mac and Cheese for One

I made as directed (substituting quinoa pasta, gluten-free flour, and GF breadcrumbs to satisfy a food allergy) and it was wonderful!! The flavor was fantastic; the sauce was rich and creamy. Delicious! I suppose I should note that I used skim milk and reduced fat cheese, which wasn't the problem that I feared. I will make again, but next time cook a few more noodles and decrease the salt just a touch. It was a little salty for my taste, but very enjoyable. Thank you for sharing this recipe!

Tex Mex Black Bean Dip

Delicious!! Very easy recipe to play around with. I added chicken broth and a little liquid smoke to simmer. I also used rotel for the tomatoes and then a 2nd can of beans. Also, pepper jack cheese. Spicy, but SO flavorful and great texture. FUN recipe! Get creative!

Meatball Nirvana

DELICIOUS meatball! I made seasoned breadcrumbs out of some Gluten Free cornbread to make it wheat-free. Otherwise, I followed the recipe exactly. I am giving it 4 stars only b/c following the baking instructions still left my meatballs a little dried out. Next time I will cook a little lower/slower. Wonderful recipe!

Pumpkin Roll I

This is delicious!! I found this recipe and decided to try it. My mother hates pumpkin pie and my father loves it. I wanted to find something that everyone would want to eat. I made this and not only did everyone love it, but it was very much like a recipe my Grandmother used to make. This is a great new addition to our holiday treats. We'll make this from now on. I didn't have to change a thing.

No Bake Fudge Cookies

I make them exactly as stated. Any variation will mess up the texture of the cookie. Expect these to be very sweet like candy. What do you expect? There is nearly as much sugar as there is grain! It's delicious, easy, cheap, and naturally Gluten Free.

Pesto Polenta Lasagna
