About this Cook
I am a Mom with a wonderful 3 year old little girl. I have lived in Alberta, Canada all of my life. I have been cooking since I was extremely little, and absolutely love it. My Mom was always the master baker in the family and she makes the best pie crust in the world. My Dad was born and raised in England, and did most of the cooking, so I grew up being used to English food. Unfortuantely, he passed away, and I have not eaten many of my favourite foods in years. I don't even bother trying to duplicate his recipes, because I know it will never taste the same.
My favorite things to cook
I love cooking all different things. I love to cook and prepare vegetables. There are actually so many things that you can do with them, and there is not a single vegetable that I don't like. I also love to bake and put together desserts. I pretty much do that for my daughter. I don't have a big sweet tooth, but she sure does. Pasta is a favourite thing of mine to make. I love Italian and English the best, though.
My favorite family cooking traditions
We had the basic cooking traditions. My two favourite meals of the year are Thanksgiving and Christmas. There is nothing like Turkey and all of the trimmings. Especially the yams and pumpkin pie. The only thing that was a tradition while growing up was that when my Mom was frying meatballs, or pancakes, she would put a plate right next to the stove to place them on once they were done. Then she would go do laundry or other things and as soon as she left the kitchen, my brother and I would swoop in, and snatch a handful at a time. Needless to say, we were always too full to eat with the rest of the family, and it drove my Mom absolutely nuts!
My cooking triumphs
I think that anytime I make something that really really tastes great, it take it as a huge accomplishment. I have had some cakes turn out REALLY amazing. I make awesome homemade meatballs and sweet and sour sauce.
My cooking tragedies
I've had a few. Usually the basic like putting way too much salt on or in something. I'm just not good at making any kind of bread or pie crust. My Mom will make me a batch of pie crust shells and give them to me to freeze so that if I have comany coming, I can just grab one out of the freezer, bake it,and turn it into some kind of cream pie (chocolate, banana cream, coconut cream or lemon merangue). My Mom is my life-saver!!!

Lite Carrot Cake
Okay... this is only getting 3 stars from me, but I'm pretty sure it's my fault. I really altered this recipe, and I pretty much botched it. I used all white flour. I used 2 cups of carrots and I used apple sauce instead of the oil, and then ended up adding 2 tbsp. oil. Also added a dash of nutmeg. The result? Gummy muffins that takes you an hour to get through. So, I'm sure this is probably a terrific recipe if you don't mess with it. Guess it just proves that you really shouldn't mess with a good thing.

Divine Summertime Chicken Sandwich
This is a GREAT sandwich! The only alterations that I made are: I grilled my chicken breasts (I used very thin chicken breasts), I used fresh dill and no butter. I also let the chicken cool completely before adding it to the sandwich. Then I wrapped them, and packed them for my picnic! Really fresh and delicious. HIGHLY RECOMMENDED! Thank you SO much for such a terrific recipe!

Banana Muffins II
I just made these and they are AMAZING! The only thing I added (like most others) was a tsp. of vanilla extract. I also added some chopped walnuts to half of them. It made 12 large muffins, and I baked them for 20 minutes. Thanks for the great recipe I will be using over and over. My picky 3 year old daughter even loves them!
