Paleo Slow Cooker Pork Loin

Reviewed: Feb. 11, 2012
I was surprised how well this turned out and will make again. Reading the reviews I was worried there wouldn't be enough flavor so I added a little more cinn. extra apple and doubled the curry and added about 1/2 tsp of garam masala, and 2 whole cloves and 2 bay leaves and tangerine juice because its what i had. After cooking 4 hours I plucked an orange from my tree and added a tsp of the zest. I did not add coconut but planned to add coconut milk if it needed it, but it didn't in my opinion. I just used pork chops what was on sale at the store, and cut them up. Very tender sweet and spicy-really delicious- economical- healthy and EASY. Can make sauce thick by adding cornstarch and cold water together at end of cooking but I liked it soupy.

Jay's Signature Pizza Crust

Reviewed: Nov. 21, 2011
Only add enough flour while mixing with dough hook until poked with index finger -the dough feels like chewing gum. This is the best advice I can give and helped me tremendously. Leaving at room temp in a plastic bag coated with oil for 3-5 hours- punch down occassionally. I use fresh yeast because it is what I have on hand but convert measure by googling. You may have to use more salt to taste and more flour. Made in a small stand mixer with dough hook and went 5 min med low speed. Not as easy as it seems to make great pizza dough. Also great flour really helps.

Homemade Tomato Sauce I

Reviewed: Aug. 1, 2010
My 19 year old son made this with garden fresh basil, onions, and some tomato but supplemented with paste and 1 can chopped tomato as we did not have enough fresh, instead of burgundy added a cabernet shiraz blend. Did not add bell pepper but minced onion tops. Did not simmer 2 hours only 10 minutes.Sauce was so excellent I had to leave this review. No salt was necessary.

I enjoyed this with dandelion greens, celery, tomato, red onion, and avacado salad. It was super easy to make and not too salty or sweet.

Chicken with Chipotle

Reviewed: Jun. 30, 2007
Made this dish 6 times. My Spice luving family enjoy this. Easy, had few ingredients, and delicious. BEWARE Chipoltles are HOT! dont be tempted to do more than 2 because you got a Whole can of them. As others suggested I used only 1 cup of milk. I have used chicken breasts(cut up) or tenders sprinkled with garlic powder, salt and paprika and sauted in a bit of oil to save time, and poured the sauce over and heat it up. Garnish with a hefty douse of chopped fresh cilantro. Dinner in a matter of 20 minutes.

Bran Muffins III

Reviewed: Apr. 29, 2007
I followed the recipe EXCEPT from reading past reviews I added an extra 1/2 tsp. salt, 1/2 cup of plumped raisins, 3/4 -1 cup of walnuts(I'm nuts about nuts in everything),1 tsp. of cinnamon, xtra 1/2 tsp of baking soda,1/4 cup of brown sugar and 3 tbs of splenda. The muffin exceeded my expectations, from the ingredients I thought it would taste like cardboard. I just ate two warm from the oven with butter and grape jelly-YUM! Produced 16 medium sized for me. Very fast to whip up for breakfast.

Southern Grilled Barbecued Ribs

Reviewed: Nov. 14, 2005
Excellent and easy recipe. I baked the ribs about 40 min. longer in the oven as I like my ribs tender. I used to marinade my ribs with a rub over night and then bake them for 6 hours in the oven-that is A LOT more work than this recipe which turned out great.

Kickin' Collard Greens

Reviewed: May 22, 2005
I made this for my sons high school class assignment which was to bring in and share a southern dish with his English class. I am from New England and this was a first for me. The collards came out so good and was very easy. I added another clove or 2 of minced garlic, used 3 bunches of organic collards sliced fine, 1tsp. of sugar and Cambells chicken broth with a can of water along with the other necessary ingredients. It turned out so good the teacher snagged the leftovers and just gave my son back the containers with a guilty look on her face. I see she was as pleased as I was with the results.

Burmese Chicken Curry (Gaeng Gai Bama)

Reviewed: Apr. 1, 2005
I really like this recipe, it has a great balance of flavors the fried shallots really adds to it but if you dont have enough you can fry up crispy, some paper thin sliced onions. I have made this a few times with chicken and just tried it with baked firm tofu (30 min at 400 degrees) marinated with 6 tblsp. of soy sauce, 2 tsp of both honey and balsamic vinegar and a few cloves of garlic. My family especially my husband likes finely minced fresh jalapeno peppers in the dish. I dont use palm sugar, just reg. sugar. Thank you M. Chen for submitting this recipe which is now served frequently in my home.

No Sugar Apple Pie

Reviewed: Jan. 6, 2005
I have made this recipe since Thanksgiving 4 times. I did not use a top crust *saves time* and on some I added chopped walnuts on top. Pecans would probably make an excellent topper but boy! they are expensive. The amount of apples are not critical I use about 10-12 Granny Smith apples and make two at a time. My DH can not eat sugar and likes more Splenda in his. My daughter who can eat sugar loves this pie. I feel good about this desert being it is made with so many fresh apples. YUM!

Beef Tenderloin With Roasted Shallots

Reviewed: Oct. 15, 2001
Can't say enough about this recipe. My guinea pigs (Father in law, husband, 3 teens)thought they died and went to heaven. When you start with a great cut of beef your way ahead of the game. I made the sauce with 50%Port and 50% good Cabernet Sauvignon, thinking the port may be too sweet. I aso served this with some puff pastry (the ones w/ the tops in the frozen food section of your grocery). I omitted the 3 tbs of butter into the sauce but added 1 tblspoon. Reduced the sauce, and roasted the shallots in the morning. Husband loved it with the watercress, and looks lovely on the plate. "Tenderloin" IS expensive.. but the same cost as "Chinese take out" (that couldn't be half as good). Worth the expense, the time and effort...Thank you for a very easy and special recipe, and makes the cook look like a Julia Child.
