Orzo with Kale

Agree with some of the other reviews. It could have used some broth or water to help cook the kale. Mine was still a little tough, and I stopped it from cooking earlier than suggested because it was burning and drying out. Enjoyed the touch of flavor from the turmeric and nutmeg. Adding a little chicken broth would have blended nicely.

Chicken Curry Salad in a Hurry

Yummy!!! Except for adding more mayo (probably close to double what the recipe calls for), i stayed true to the recipe. Very tasty! I love the bite of the cayenne and curry combined with the sweetness of the apple. That is tasting before it's had time to chill for 1 hour or overnight too. Can't wait to have this for lunch tomorrow!

Sausage Pasta

We thought this was ok. However, I used sweet Italian sausage instead of spicy because I was hoping my toddlers would eat it. They didn't like it anyway, so next time we will try spicy. The sauce was a bit too watery. I did add about 1/2 cup heavy whipping cream which helped but still could have been thicker. The flavor over all was good but my husband and I both felt that something was still missing but couldn't put our finger on what it needed. Maybe we will try fresh spinach and basil next time to see if that and spicy sausage do the trick. I did like that this was a quick meal to put together. Great week night, one dish meal.

Absolutely The Best Shrimp Scampi

Great flavor but too dry to serve over pasta the way we normally do. Probably would have been better as a main along side rice pilaf as suggested in the description, but since the picture showed pasta that's what we did. We had to butter the noodles to add a little moisture. I also added some lemon juice based on other reviews. I added extra garlic and used dried parsley since we did not have fresh. We also did not have brandy in the house. The closest thing to white wine we had was Marsala, so we tossed that and the shrimp back in the skillet and skipped the igniting and broiling.

Curried Honey Mustard Chicken

This was good, but I liked it better as leftovers for lunch the next day. I marinated the chicken for 24 hours. Also doubled the curry and used more than a pinch of Cayenne. We like spicy! Cooking time ended up being about 45 minutes. Served with Basmati rice season with Cumin. I found the honey a little over powering straight out of the oven, but all the spices in the chicken and rice blended really well the next day. Yummy!

Chicken with Asparagus and Roasted Red Peppers

This was very easy to prepare and pretty tasty. I was cooking 2 whole chicken breasts instead of halves, so it took a bit longer and required about 1 to 1 1/2 cups of broth. I also added more garlic. A heaping tablespoon of the pre-chopped stuff in a jar. We love garlic. The sauce seemed a bit runny, and I wanted to serve over pasta, so I threw in half a can of cream of chicken soup that was leftover from another meal. This thickened the sauce nicely and served well over angel hair pasta. We then topped with Parmesan instead of Mozzarella. Yummy!!
