Sweet Potato Enchiladas

I added garlic powder, a can of black beans, chopped green chilies, and whole kernel corn. My daughter wasn't sure of the texture, but it was really good.

Slow Cooker Lentils and Sausage

I used chili ready tomatoes, added oregano, basil, chili powder, minced garlic,bay leaves, and red pepper flakes. It was delish!!! This will be made again in our house!

Parmesan Sage Pork Chops

Yummy! My family loved it!!! It took a while to prepare, and was fried in the oil and butter, but it will be in our rotation of once in a blue moon!!! Maybe I will put them in the oven without frying them to make them healthier!

Chicken Enchilada Slow Cooker Soup

Absolutely Delish!!! I made it twice for my family. I increased the broth to 2 cans and added a can of black beans. It will be in my regular rotation once school and sports start again!!!

Feta Cheese Turkey Burgers

I used garlic herb feta cheese instead of plain. I also added extra spices, I like to use Hot Shot pepper, Italian Seasoning instead of Oregano, Onion Powder, and a dash of Chilli Powder for color. Next time I make them I will add chopped onion. When I make Turkey Burgers, I like to put the patties in the freezer for 15 minutes to help them keep their shape. It works great!

Ricotta Cake

AWESOME!!!! I used a white cake mix, and used almond extract and burbon vanilla as others had suggested. I also baked the cake in a bundt pan and used only half of the ricotta mixture. Any more the cake would have overflowed from the pan. I filled the middle with strawberries and fresh mint before dusting with powdered sugar. I also served a strawberry champagne sauce over the cake once we sliced it. It was a little tart so it balanced out the sweetness. There was barely any left!!!!

Red Beans

Yummy!!! I didn't have ham, but used leftover porkchops... Big mistake! I didn't think it would affect the flavor much, but it did. I also cooked them in the crockpot and substitued butternut for pumpkin. My family loved it!

Zucchini Herb Casserole

This was delish!!! I gave it 4 stars because I used brown rice, and had to double the amount of rice used. Next time I am going to add corn, black beans, and some spinach. (Something that I add to almost everything!) My family loved it and I was hoping for leftovers, but there weren't any!

Sour Cream Chicken Enchiladas

DELISH!!! I used fat free sour cream, corn tortillas, added corn and chopped garlic to the chicken mixture and extra green chillies. I also had some extra baby spinach that I needed to use so I added it to the sauce to thicken it up.... YUMMY!!! I can't wait to make it again!

Sweet and Spicy Stir Fry with Chicken and Broccoli

Yummy! Don't over steam the broccoli like I accidently did. I also added unsalted cashews for some extra protein. It wasn't spicy at all... when I make it again I will be adding a serano pepper for some extra heat..

Sweet and Spicy Soup with Black-Eyed Peas and Sweet Potato

All I can say is Yummy!!! I made some tweaks to the recipe, but was asked to make this again... I used fresh sweet potatoes and sauteed them with the other veggies. I also used fresh black eyed peas. There wasn't enough liquid so I added 4 cups of veggie broth and 4 cups of chicken broth. We also chopped up a whole jalapeno, seeds and all to make it spicier... I didn't add the garlic or onion powder since I added fresh, but added dried cilantro and parsley. Last but not least, I used fire roasted canned tomatoes instead of fresh ones...

Asparagus Cashew Rice Pilaf

Green Chili Stew

This was really good, but I made some modifications to the recipe... I doubled the recipe and added a can of white hominy, used 6 fresh roasted anaheim chillies instead of the canned chillies, substituted a can of tomatoes for canned tomatoes with green chillies, substituted chicken broth for water, and added fresh spinach at the end... My family loved it!
