Guinness® Bread

This is a tasty bread! Tried it for St Pat's day slathered in Kerrygold. YUM!! Baked it in a cast iron dutch oven. Came out perfect. However I followed a previous suggestion and started with a temp of 400 and dropped to 350. Can't imagine it wouldn't be overdone with a higher temp??

Easter Buttermilk Hot Cross Buns

Every year on Good Friday we make hot cross buns. I had some buttermilk on hand, so I thought I would give this recipe a whirl. So glad I did! We will absolutely be using this next year. I made some slight alterations. For the flour, I used a 50/50 combination of whole wheat flour and bread flour. I mixed the wet and dry ingredients separately (after proofing the yeast and this made a very easy, workable dough! Also made small slits on the top before baking, so they had lovely cross ridges in the top. I topped them with royal icing, so the crosses were predominant.

Spinach Brownies

Even after I added carmelized onions, pancetta, sauteed garlic, nutmeg, herbes-de-provence and gruyere - I still found these really bland and doughy. My kids who LOVE spinach and request quiche on a regular basis ate just two bites.

Mike's Portuguese Tuna Rice Casserole

I made this with Arborio rice and added smoked paprika and did one can tuna, one can of crab meat. Came out beautifully...like a baked risotto. lovely recipe to for a quick pantry meal:)

Chocolate Chip Cookies I

This is the PERFECT chocolate chip cookie recipe. i made it with butter instead of shortening and used ghiradelli semi sweet chips. The cookies come out consistently good and are as excellent the next day!
