A Good Easy Garlic Chicken

The name says it all...Good Easy Garlic Chicken, except I replace Good with Awesome! For those that don't agree, I'm thinking either they are over seasoning or they are not seasoning the chicken enough. I did use a bit more butter than the recipe calls for, but other than that, I didn't change a thing.

Guacamole

I never cared for guacamole. Then a friend of mine asked me to taste some she made. It was good, so I searched for a recipe. I found this one and now I love guacamole! The garlic is a key ingredient. I added a little more garlic and a little extra lime juice than the recipe calls for. This is the ONLY guacamole I will eat!! Oh yeah, for some reason the organic cilantro seemed to be a little more potent than the other. This is quick and easy to make too.

Simple Turkey Chili

Awesome! I added a 4 oz can of mild green chilies, one additional 16 oz can of kidney beans and I used diced tomatoes as opposed to crushed tomatoes. No need to search for any other turkey chili...it doesn't get any better than this.

Italian Breaded Pork Chops

Chuck's Favorite Mac and Cheese

Great flavor! I definitely had to add a half cup of milk. My kids approved this recipe also. My only concern is I don't like the fact that you can see the cottage cheese after it is fully cooked. I may add more cheddar cheese next time to try to hide the cottage cheese.

Cheeseburger Soup I

Great comfort food! I was a little skeptical, but after all of the great reviews I got from my family...this is for keeps! I used a pound of ground beef and increased the amount of vegetables slightly. I also used one 8oz block of sharp cheddar and one 8oz block of medium cheddar which I cubed myself. I think it is the perfect soup for a cold snowy day.

Baked Garlic Parmesan Chicken

OMG! This was awesome!!! I used more garlic than the recipe suggests and I increased the parmesan cheese. I did lightly sprinkle some seasoning salt on the chicken before dredging in the oil and garlic. I also used thin sliced chicken breasts which I believe allowed the flavor to go all through the chicken. I will be making this regularly.

Chicken Pot Pie IX

This recipe deserves more than five stars. I love it! The kids love it! I took some to work for lunch and a couple people sampled it and now they are constantly asking when will I make it for them. I followed the recipe,added potatoes and added a little butter to the filling just before I added the crust on top. I had more than enough filling for one pie, but not quite enough for two full pies. It was so easy to prepare and tastes much better than my favorite store brand. Another one for my dinner rotation.

Gumbo Style Chicken Creole

This was so so good! I left out the mushrooms (don't care for them), and added smoked sausage. I also added 1 1/2 cups of chicken broth which is definitely needed. I'm sure adding creole seasoning as others suggested would make this an awesome dish, but I prepared it as written because my three two-year olds were eating this too. They also liked it. They even asked for more. I will be making this often.

Cajun Seafood Pasta

This is one of my FAVORITE recipes!!! I love spicy food, but I too had to reduce the red pepper. There is quite a bit of work to this recipe, but well worth it. My advice is to use all fresh herbs. This recipe is restuarant quality.

Famous Butter Chicken

I cooked this for the first time today. I was skeptical at first because the recipe seemed to basic. I used garlic and herb seasoning on the chicken and mixed it in with the cracker crumbs. I also included parmesan cheese and italian bread crumbs in the cracker crumb mixture. I used thin sliced chicken (I think you taste the flavor of the spices on thinner cuts of meat. I reduced the butter amount to half of what the recipe calls for and this chicken was still awesome!!

Authentic Louisiana Red Beans and Rice

I cooked this for a potluck at work and most thought it was really good. I've recieved 2 requests to cook it for them for a couple special events than plan to have. I loved it and just added a bit more cajun seasoning and a bit more cayenne pepper. The andouille sausage set it off perfectly.

Banana Pudding IV

This is excellent! I made it last night for the first time. While taste-testing it last night, I thought it was too sweet. Once it settled overnight, I think the extra sweetness diminished some. My tastebuds love it and so does my sister. It was so easy to make! This recipe is a keeper. I will be taking this to the next potluck event.
