Roasted Okra

I roast fresh asparagus using these same ingredients all the time, but never thought of roasting okra. Tried it and it was great, not mention easy, low slime :) and easy clean-up! I did add some sliced vidalia onions, garlic powder, and red pepper flakes to the mix which made it better IMO. Thanks!

Greek Tzatziki

Tasty, but I made the mistake of straining the yogurt as most reviewers suggested, but failed to cut back on salt and lemon. If you strain the yogurt, you should cut back on the lemon zest and the salt by half. It's amazing how much liquid strained out of the yogurt. Very important step-- think it would have been runny otherwise.

With the revisions in the recipe submitter's review, this was great. We served it with greek potatoes and tzatziki sauce (kids chose ketchup). They are a little mushy going on the grill and easy to fall apart, but flavor is excellent. I may grill as patties next time, or pan fry. This recipe makes a lot, so I froze some uncooked for another day--should be an easy dinner.

Salmon Fillets with Creamy Dill

Very easy and tasty. I cut back on the mayo, 1/3 cup per filet is plenty. I also reduced cooking time by 5 minutes. Came out great.

Baked Orange Roughy Italian-Style

Shrimp Scampi III

This is a very good recipe, but I can't bring myself to give 5 stars to any recipe that tells me to discard garlic (?!). I made the following changes which I think made it better (my entire picky family loved it). First of all, I marinated the peeled shrimp WITH the garlic, coursely chopped, and about a tbs. Italian seasoning, some fresh ground pepper, and 1/4 cup olive oil for about 2 hours. I sauteed the shrimp until barely pink (with the garlic, of course), and I added the parm. cheese with the wine, and simmered for about 5 minutes, then used about 1/2 cup seasoned bread crumbs to thicken. Came out great, sauce neither too thin nor thick, excellent flavor.

Beef Pot Roast

Good, tender roast. I stuffed some garlic slivers in the meat before searing, and added about half a cup of beef broth, some carrots, diced potatoes, and onion wedges.

Herbed Cornish Hens

Very tasty, and easy. I couldn't resist adding some fresh chopped rosemary, crushed garlic and butter under the skins. I also turned the hens on the rack and increased oven temp for a few minutes to brown the bottom skin. I would cut back a bit on the amount of lemon juce next time, but the baste did make a savory sauce in the bottom of the pan (grease can be skimmed off). Will definitely make again.

Amazing Pecan Coffee Cake

Excellent. Everyone enjoyed this. I used half cream cheese and half sour cream, also doubled the topping mix as suggested, and poked some of it down in the batter before baking. It took much longer than the 35 minutes to bake, closer to an hour to be done in the middle.

Banana Bread I

Excellent, delicious recipe. Easy--my kids did most of the work. Adding 1/2 tsp. of baking powder, 1 tsp. vanilla, and using half brown and half white sugar is a good idea. I did muffins, and baked at 375 degrees for about 18 minutes as suggested by another reviewer. I used some bakers joy on a non-stick muffin pan and they came right out when I flipped the pan over.

Fantastic Lemon Butter Fillet

This is a tasty, easy recipe. I made it easier by using 3 tbs. bottled lemon juice instead of squeezing the lemon, using a garlic press instead of mincing the garlic, and using a covered casserole dish instead of foil covered pan. I did add some cayenne pepper to the sauce, and sprinkled a little dill and seasoning salt on the fish. I also cut back on the lemon pepper, as suggested. I baked it 25 minutes instead of 15-20. My husband especially enjoyed this dish.

Grilled Mahi Mahi

Well, it was 39 degrees outside and raining so I decided to cook this dish in the oven. I used a covered casserole and baked for about 30 minutes at 425. I cut the recipe down for 4 people but used one whole 14.5 oz. can of diced tomatoes-- didn't have the kind with green chilis, so chopped up a jalapeno and sprinkled on top instead. Otherwise, I followed the recipe and it was FABULOUS. An easy way to make great tasting fish.

Summer Nights Eggplants

Even without one of the main ingredients (I had to substitute grated pepper jack cheese for the feta), this was very tasty. I needed to add olive oil to the skillet a couple of times because the eggplant absorbs the oil as it cooks. I also cut back on the amount of breadcrumbs--4 cups seemed like a lot. Even so, there was still a bit more stuffing than I could fit in the shells.
