Pumpkin Pancakes

Really good and moist! My little one ate them without butter or syrup. I thought the pumpkin flavor was a little weak, but that may have been because I used skim milk, which other reviewers mentioned waters down the pumpkin flavor. So next time I may up the cinnamon or use pumpkin pie spice. Also, this time, since my hubby doesn't like ginger, I used nutmeg instead - didn't think you could really have a pumpkin recipe without nutmeg!

Lime Chicken Soft Tacos

Super easy to make, and fast too. I followed the recipe as is, maybe next time I'll add a little bit more lime. I thought it was a great summertime meal. Hubby thought so too.

Corned Beef and Cabbage

Best corned beef and cabbage I've made or tasted. My in law's corned beef always was soooo dry every year, so I was nervous making my first one. This was delicious, falling apart, and moist! I've made this recipe now for the last 5 years. Sometimes I have omitted the cabbage, just cause I don't like it - turns out just fine without.

Creamy Chicken Cordon Bleu Casserole

Pretty good and easy to make, and I had a block of swiss cheese to eat up before it went bad. I didn't have egg noodles so I used elbow mac instead, and it turned out just fine. I also mixed everything together instead of layering. I would probably recommend covering with tin foil while baking just to cut down on the dry noodles, but other than that, it was pretty good. Definitely will be making again.

Easy Chicken Enchiladas

Really good and easy to make. Instead of plain cooked chicken, I baked up some chicken seasoned with cumin and lime juice. I also used the suggestion of halving the cream cheese (I used neufatchel instead), and I put half a can of red enchilada sauce on the bottom, and the other half on the top. Delicious!

Incredibly Cheesy Turkey Meatloaf

Really good and easy meatloaf. Hubby loved it, and he hated meatloaf growing up, but this is a little different from what he's used to. I did change up the recipe a little bit. I used 1lb turkey, 1/2lb beef, and 1/2lb pork. I added steak/burger seasoning, minced onion, and garlic powder. And just to be sure it was cooked all the way through, I baked it for 1hr 20min. Yummy! Oh, and I followed the advice of others, and cubed the cheese.

Beef Bourguignon II

This turned out to be a really good and very easy recipe to make. Hubby really liked it. Definitely use a red wine that you would like to also drink with it. Otherwise, I followed the recipe and found it to be really, really good.

Awesome and Easy Creamy Corn Casserole

This was an excellent side dish to bbq ribs - very yummy. I followed the recipe this first time around, although next time I may try cutting the butter in half or a third, cause it did taste very buttery. But if you're not worried about fat content, it was REALLY good!

Bacon Wrapped Green Beans

These were an excellent veggie side, very flavorful and quick too. Instead of frozen gr beans though I used fresh and steamed for 5 min. Went great with bbq ribs.

Creamy Cajun Deviled Eggs

Turned out pretty good, and got eaten pretty quickly at a recent get together. I did use a little bit more miracle whip as I thought it was originally a little too dry. I also didn't put as much of the hot sauce in because I wanted my LO to try one.

Parmesan Broccoli Balls

I really liked these, and it was a great way to get my daughter to eat broccoli. They were also pretty easy to make. I followed the recipe as is, although next time, I may use less butter as the pan I baked these on had a lot of grease/butter on it when I pulled them out of the oven. Will become a regular in house as I don't really like broccoli plain.

Peach Cobbler V

Turned out pretty good and got gobbled up at the 4th of July cookout that I made it for. The only thing I did differently was use 2 cans of canned peaches (1 large can, and 1 regular sized can), and added some cinnamon and nutmeg to the batter. Yummy!

Pretty good and easy to make for the weeknight. Hubby really liked it too. Only change I made was to toss the stuffing mix with some melted butter, then used that as the topping - extra yummy that way!

Super Duper Zucchini Muffins

These turned out really good - just be sure not to overmix the batter. This seems to be the secret of moist cupcakes. Anyways, the only changes I made were to use butter instead of shortening, and I omitted the nuts as these were for my daughter's snack at school, and can't bring anything in that has nuts in case someone has a nut allergy. Oh, and I forgot the brown sugar sprinkling on top, but they still turned out good. Great way to get your kids to eat some veggies!

Easy BBQ Bake

This was ok, although easy for a weeknight meal. I only made two chicken breasts, and 45mins seemed like too long of bake time as they turned out a little dry. Probably only need to do 30min next time. And I followed the recipe exactly, just used a honey bbq sauce (Sweet Baby Rays).
