World's Best Lasagna

Overall, this was a great recipe. Made it for a family Christmas dinner, and everyone loved it. I read the reviews after I had made the sauce, and wish I had done it earlier - the only thing I would have changed was the amount of salt. I thought it was too salty - my family thought it was fine, but they've always like salty foods. Definitely will be making again, but with less salt. Delicious, and relatively easy to make even with all those ingredients and cooking time.

Eggnog Cookies II

Excellent christmas cookies. Followed the advice of others and added cinnamon, nutmeg and vanilla extract. Delicious! So soft and were thick/puffy - unlike another recipe I tried off of Pintrest (paper thin). Will definitely be adding this to my yearly christmas cookie list.

Gourmet Sweet Potato Classic

I like this, although I think my family thought it was a little sweet. I roasted my sw potatoes at 400 for 1hr-1hr 15min. You really don't need to make extra of the topping - it's great as is.

Zucchini Soup III

As a kid, my mom used to make something similar but with Italian sausage, and less soupy, so it was more of a main dish not a soup. But I liked this as a soup. The only changes I made was I used ground Italian sausage - once I used sweet, another time I used mild - I liked the sweet better. And I also added some chopped red pepper. Really tasty, and if you spoon off the fat, pretty low calorie.

Colleen's Slow Cooker Jambalaya

Relatively easy to make, but I thought it was a little spicy - maybe it was the Andouille sausage I used. Both hubby and I agreed that next time we might try either sweet Italian sausage or smoked sausage. Also, I used a lot more peppers - 2 green and 2 red peppers; just to up the veggies. Turned out good with that many peppers. Will be trying again, but with the changes I mentioned.

Roasted Cauliflower and Leek Soup

Really great flavor. My hubby was skeptical as he's never had anything with leeks in it before, and he ended up really liking it. And my 2YO too - couldn't believe she actually ate some too - she's the pickiest eater! Stuck to the recipe for the most part - instead of vegetable oil, I used olive; and I used 2T of butter instead of 3T. Maybe next time though, I might try half and half or 2% instead of the heavy whipping cream to cut down on calories. Oh, I did like other reviewers mentioned - I roasted my cauliflower at 425 for 20-30min. And I did use an immersion blender for a portion. Really good and easy to make!

Mushroom Sauce Baked Pork Chops

Our family thought this was just ok, not very flavorful. I may try some of the other suggestions that other reviewers mentioned (Cajun seasoning, maybe more garlic, etc). The only changes I had made was using red potatoes instead of russet, I only used 1 onion. Also, this seems like it would be pretty good with mashed potatoes instead of the sliced potatoes.

Whole Wheat Blueberry Pancakes

I really like how low calorie these, as compared to regular or box mix pancakes. So far, I've made them a few ways, and like it most with various fruits, cinnamon and vanilla. As is, without any fruits, the pancakes are very plain tasting and haven't gone over well with my family. Hence, if I'm making these without fruit, I do add some cinnamon and vanilla. Really adds to the flavor, and not much to the calorie count.

Pumpkin Pancakes

Really good and moist! My little one ate them without butter or syrup. I thought the pumpkin flavor was a little weak, but that may have been because I used skim milk, which other reviewers mentioned waters down the pumpkin flavor. So next time I may up the cinnamon or use pumpkin pie spice. Also, this time, since my hubby doesn't like ginger, I used nutmeg instead - didn't think you could really have a pumpkin recipe without nutmeg!

Corned Beef and Cabbage

Best corned beef and cabbage I've made or tasted. My in law's corned beef always was soooo dry every year, so I was nervous making my first one. This was delicious, falling apart, and moist! I've made this recipe now for the last 5 years. Sometimes I have omitted the cabbage, just cause I don't like it - turns out just fine without.

Creamy Chicken Cordon Bleu Casserole

Pretty good and easy to make, and I had a block of swiss cheese to eat up before it went bad. I didn't have egg noodles so I used elbow mac instead, and it turned out just fine. I also mixed everything together instead of layering. I would probably recommend covering with tin foil while baking just to cut down on the dry noodles, but other than that, it was pretty good. Definitely will be making again.

Easy Chicken Enchiladas

Really good and easy to make. Instead of plain cooked chicken, I baked up some chicken seasoned with cumin and lime juice. I also used the suggestion of halving the cream cheese (I used neufatchel instead), and I put half a can of red enchilada sauce on the bottom, and the other half on the top. Delicious!

Incredibly Cheesy Turkey Meatloaf

Really good and easy meatloaf. Hubby loved it, and he hated meatloaf growing up, but this is a little different from what he's used to. I did change up the recipe a little bit. I used 1lb turkey, 1/2lb beef, and 1/2lb pork. I added steak/burger seasoning, minced onion, and garlic powder. And just to be sure it was cooked all the way through, I baked it for 1hr 20min. Yummy! Oh, and I followed the advice of others, and cubed the cheese.

Beef Bourguignon II

This turned out to be a really good and very easy recipe to make. Hubby really liked it. Definitely use a red wine that you would like to also drink with it. Otherwise, I followed the recipe and found it to be really, really good.
