Cranberry Pistachio Biscotti

Followed this recipe to a T and they came out absolutely wonderful. The dough is very sticky, a followed another reviewer's advice and wet my hands to help form the loaves. Also, make sure the loaves cool at least 15 or 20 minutes before cutting to prevent the dough from crumbling. After cutting, I cooked the cookies 10 minutes on each side and they were perfect. It's a decent amount of work so I would double the recipe to really make it worth it. Don't worry, they will go fast!

Zucchini Bread IV

This will be my zucchini bread recipe from now on, it's very good. However I did change it up a bit according to other reviewers' suggestions, so I cannot rate the original recipe. I rated the recipe based on the following changes: added 1/2 tsp. nutmeg, added an extra cup zucchini, used whole wheat flour. Added the crumbly topping as recommended by MarieClaire (I actually halved her recipe based on other reviewers' suggestions: 1/2c flour [used whole wheat], 1/2 c brown sugar, 1 tbsp butter, 1/4 c chopped walnuts, 1 tsp. cinnamon). YUM! Next time I'll substituting half of the oil for unsweetened apple sauce to make it a bit healthier.

Meaty Slow Cooker Jambalaya

We love shrimp, so we switched it for the ham. I threw small cooked shrimp in the crockpot for the last 30 minutes. Couldn't find file powder, so I omitted it. Served over brown rice. Very good!

Italian Sausage Soup

This was very good. I followed other reviewers' recommendations - omitted salt, doubled the garlic, browned an onion with the sausage, and added 1/2 orzo pasta when I threw in the beans. I had an extra cup of spinach so my spinach totaled about 3 cups. I used hot italian sausage. You pretty much can't get this recipe wrong!

Jambalaya II

I used 2 lbs chicken (thighs were on sale so I used them instead of a whole chicken), 1 lb andoiulle (cajun)sausage, and 3/4 lb shrimp. I took everyone's advice and omitted one green pepper. It was absolutely perfect, will add to the regular rotation!

Peanut-Ginger Marinade

This marinade was really good. I will make it again. I marinaded it overnight... about 20 hours actually. Chicken came out tender and spicy (I don't think this is very kid friendly due to the kick.) After grilling the chicken skewers I did feel like I needed some type of dipping sauce for the chicken. Either I will reserve some of the marinade next time, or make a peanut dipping sauce. I stuck with the recipe except a few minor switches due to what I had in my cupboard. I used natural peanut butter instead of regular, rice vinegar instead of white, grated ginger instead of fresh ground, and red pepper flakes instead of ground.

Libby's® Pumpkin Cranberry Bread

Very yummy, it was a big hit at a family brunch. I substituted half of the oil with cinnamon flavored apple sauce. I accidentally forgot to put in the orange juice, but it didn't seem to matter. I couldn't imagine this tasting any better! I will make it again for sure (with the OJ).

Incredible Red Smashed Potatoes

One word of advice... Only put in half the butter and half and half mixture, as well as half the salt, then taste. I am so glad I did because it was rich, and plenty salted!! I did use all the sour cream, but it was light sour cream. I also left the skins on. YUM...
