Zucchini Bread IV

This will be my zucchini bread recipe from now on, it's very good. However I did change it up a bit according to other reviewers' suggestions, so I cannot rate the original recipe. I rated the recipe based on the following changes: added 1/2 tsp. nutmeg, added an extra cup zucchini, used whole wheat flour. Added the crumbly topping as recommended by MarieClaire (I actually halved her recipe based on other reviewers' suggestions: 1/2c flour [used whole wheat], 1/2 c brown sugar, 1 tbsp butter, 1/4 c chopped walnuts, 1 tsp. cinnamon). YUM! Next time I'll substituting half of the oil for unsweetened apple sauce to make it a bit healthier.

Excellent Oatmeal Cookies

These are absolutely delicious! I read that some reviewers' cookies were coming apart, so I added 1/8 c extra flour as recommended and I made sure that I rolled the cookies into tight balls before placing on cookie sheet. I also reduced salt by half, due to reviews that the cookies were too salty. Will make again and again!

Mashed Sweet Potatoes

I didn't need to break out the mixer... potatoes were soft enough to just mash up with a fork. All you really need here is half the butter and the syrup the recipe calls for and NO milk. SO much healthier that way (I even used light syrup). A couple dashes of cinnamon and yum!

Shrimp Stir-Fry

I really like this recipe because it is healthy and yummy. I think I'll change it up just a little bit next time. I think the sauce wasn't quite enough so I might make a little more. Also, it needed a little spicing up so I think I will throw in some ground cayenne pepper. But this is a good base recipe and you can throw in the veggies you want and adjust the spices as desired.

Lemon Rosemary Salmon

Very good! I squeezed extra fresh lemon on the salmon, because I didn't think just placing the slices around the lemon gave it enough lemon flavor. Will make again!

Black Bean and Couscous Salad

YUM- this was very good. I added a little extra lime as other reviewers suggested. One note about cooking couscous... this was my first time cooking plain couscous (I've only cooked the flavored kind out of a box). With following the instructions exactly, my first batch of couscous came out too mushy. You can't have mushy couscous with this recipe... it has to have good separation. My second batch was perfect. I took 3 minutes off the cooking time and immediately removed it from the heat and the pan and stirred it up in a large bowl until it cooled a bit. If you leave it in the hot pan, even after taking it off the heat, it will continue to cook and get mushy underneath. Also, another reviewer's batch came out muddy. To prevent this, I rinsed the beans and corn thoroughly and placed them in a strainer in a sink for a couple of hours to dry out.

Grilled Sweet Potatoes with Apples

I lightened this up a bit... I used half the butter and only a couple tablespoons of sugar. It might be a 5 star if I used all the butter but I wanted to keep it as healthy as possible. Next time I will add another apple or maybe use half apples half sweet potatoes because the apples were the yummiest part!

Mocha Walnut Cookies

These were good! My first batch was a little flat, so I added a touch more flour and that did the trick. I let each batch cool for 5 minutes before moving to serving tray and had no problems with cookies falling apart.

Sweet Potato Pineapple Casserole

This is excellent. I followed the ingredient list exactly, except that I added about an extra half cup crushed pineapple to use up what I had. I agree with other users about the pan size - the listed size is too big unless you double the recipe (which I did!) Let me add that there is a simpler way to make this. I am pretty lazy about prep and cleanup, so I decided to just bake the sweet potatoes on a foil lined cookie sheet in the oven until very soft. Cut them in half and spoon out the insides. Why peel, boil, chop?

Pasta and Peas

As is, this is a 3 star recipe. A bit bland and not much to it. I added a couple large handfuls of parmesan, a couple dashes of pepper, and an extra splash of olive oil and that made it more of a 4 star recipe. Would be good with chopped chicken. I used frozen peas with some of the water used to boil. Hate that can liquid stuff. Also, I don't recommend using all the pasta because it dilutes the flavor a bit. Add the pasta slowly as you are tossing and taste it. I used about 3/4 of the amount in the recipe.

Pumpkin Brownies

I got rave reviews for these on thanksgiving. Someone even told me it was the best brownie they ever tasted! Just know that these are pretty rich and heavy. I don't think I will bother with the marble effect next time. It didn't really work out.

Sweet Potato Chili

Very Easy Crab Dip

This came out pretty good. I agree with the previous Ritz cracker comment. I bought a craker called Sociables, and it doesn't have that buttery taste like Ritz that would go so well with this recipe. I am going to buy some Ritz tomorrow! And I think I will dice up some green onions on top to add a little more zip.

Marmalade Pork Chops

This was OK. I would have given it a higher rating, but I cooked it 60 mins as it says in the recipe and they came out dry. I wish I would have cooked for 50 mins as another reviewer suggested. I just got busy and didn't check them. Also I didn't expect the sauce to be as thin as water. Will not make again.
