Apple and Spice Pork Roast

Reviewed: Oct. 28, 2010
Very good - followed recipe exactly as written. Next time I will double the applesauce mixture as recommended by other posters.

Marinated Flank Steak

Perfect! Made exactly as stated. I only had 3 hours to marinate though and it was enough.

Summerly Squash

Wonderful side dish. Made exactly as stated, except I probably doubled the oil... I felt like it needed a little more as it started cooking.

Corn and Black Bean Salad

Reviewed: Aug. 6, 2010
Delish! I agree with previous posters that it could use some chopped onion. Great side dish for a pot luck or picnic.

Angela's Awesome Enchiladas

Reviewed: May 10, 2010
These are the real deal. I made exactly as is, except omitted the black olives. Outstanding! I took another reviewer's advice and left the chicken whole while boiling - makes for easier shredding. These are a bit labor intensive but are worth it.

I loved this! I omitted the hot sauce and added a squirt of lime.

Stuffed Peppers with Turkey and Vegetables

Reviewed: Feb. 19, 2010
I added a cup of brown rice and a jar of my favorite pasta sauce. As-is I thought it was a bit dry - stuffed peppers in my opinion should have a saucy filling. Very healthy and a good base recipe to make your own modifications.

These were perfect. Roll the dough thick and you will have impressive, cookie bouquet-like cookies.

Pasta and Peas

Reviewed: Jan. 31, 2010
As is, this is a 3 star recipe. A bit bland and not much to it. I added a couple large handfuls of parmesan, a couple dashes of pepper, and an extra splash of olive oil and that made it more of a 4 star recipe. Would be good with chopped chicken. I used frozen peas with some of the water used to boil. Hate that can liquid stuff. Also, I don't recommend using all the pasta because it dilutes the flavor a bit. Add the pasta slowly as you are tossing and taste it. I used about 3/4 of the amount in the recipe.

Addictive Sweet Potato Burritos

Reviewed: Jan. 31, 2010
I really liked these! I used black beans as suggested but otherwise followed the recipe exactly. Mashing the beans with your hands works great. I will be making these again in a big batch and freezing them. They are great in the microwave from frozen. **UPDATE: Using a blender to mash the beans in a huge bowl works great! Use the high setting - they all mash up in a couple minutes.

Mini Meatloaves

Reviewed: Dec. 16, 2009
These are delicious. I only made one minor change - I didn't have quick oats so I used the regular (old fashioned) kind. I thought the 8 mini meatloaves were too tiny when I formed them. I reformed them to make 4 and they were better. Yes you could eat more of them, but I was concerned about them drying out because they were so little. Next time I will 1.5 this recipe and make 4 for 4 adults.

Baked Pasta Primavera Casserole

Reviewed: Dec. 16, 2009
I don't know how this got such great ratings. It's jarred pasta sauce with frozen veggies. It's edible but much more appropriate as a side dish. But I don't think I would even serve it as that.

I really liked this recipe. The only change I made was using whole wheat flour. Otherwise I wouldn't change a thing.

Apple Butter Pumpkin Pie

Reviewed: Oct. 13, 2009
I made this exactly as instructed and it was delicious! I loved the topping. The topping is what makes this pie unique, so don't skip it. This pie isn't much different than a regular pumpkin pie as far as flavor goes, so don't expect something wildly different. It's just good pie!

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

Reviewed: Oct. 8, 2009
We liked this. I followed this recipe exactly, except I swapped one can of beans for corn. The recipe didn't specify whether I should drain the beans, so I didn't. It turned out pretty good. There is a LOT of meat in this. If you want to cut costs, this can be a much less expensive recipe if you cut down a half pound of meat, and perhaps add a can of diced tomatoes. Also, others recommended using pork loin instead of tenderloin - at half the price, I might try that next time - I just wanted to stay true to the recipe this first time.

Slow Cooker Split Pea Sausage Soup

Reviewed: Sep. 12, 2009
If this would have had one or two more boullion cubes and maybe a little less water (half cup or so) it would have been perfect. It needed just a little more flavor and was a tad on the thin side. I will make this again with these changes. UPDATE: I used one less cup of water and three more boullion cubes and it was perfect!
