Sensational Sirloin Kabobs

These were great! I didn't blanch the peppers - just tossed the veggies in a little olive oil, salt, and pepper before putting on the skewers. I would recommend doubling the marinade. After reserving the half cup for basting, there wasn't enough to cover the meat while it was marinadiing. I could have used more for basting too.

My Favorite Pork Turkey Meatloaf

I liked the fact that this had veggies in it. The topping was really good. I used half of the salt, and I still thought this was still a bit too salty. You can definitely get away with only a fraction of the salt. Used oats in place of the wheat germ, but other than reducing the salt, followed the recipe exactly.

Creamy Dill Cucumber Toasties

Perfect. I recommend peeling the cucumbers so people aren't taking off the entire cucumber slice in the first bite. I made these with Triscuits.

Peanut Butter Cup Cookies

Wow, these are so good! Other than using half whole wheat flour, I followed the recipe exactly. I totally missed the fact that you need a mini muffin pan for this recipe. So I just rolled the dough up in balls. I doubled the recipe and got 50 cookies - I had to make them a bit bigger so when I pressed the peanut butter cup in, it didn't stick out. No need for a mini muffin pan if you don't have one.

Sweet Potato Pineapple Casserole

This is excellent. I followed the ingredient list exactly, except that I added about an extra half cup crushed pineapple to use up what I had. I agree with other users about the pan size - the listed size is too big unless you double the recipe (which I did!) Let me add that there is a simpler way to make this. I am pretty lazy about prep and cleanup, so I decided to just bake the sweet potatoes on a foil lined cookie sheet in the oven until very soft. Cut them in half and spoon out the insides. Why peel, boil, chop?

Even after cutting back a little on the tomato juice (about 8 ounces), this was way too watery. The flavor was good, but it was really thin. Maybe I will try it again, making more drastic changes like some of the other reviewers.

Turkey and Quinoa Meatloaf

Not sure what the hype is all about. I've made turkey meatloaf several times and each time it has tasted much better than with this recipe. I followed it exactly, but added an extra egg to help with the crumbly issues that others reported. It wasn't crumbly... it just didn't have much taste. I got the kids to eat it by adding ketchup on top, cutting it up, and passing it off as "meatballs."

Awesome! Made exactly as written. I tried this with an "original" style crust, but next time I'm going to try a thin crust. This would be excellent with a homemade whole wheat thin crust.

Yummy Lemon Salmon Burgers

Oh man, so good! And I don't even really like salmon. These are so healthy and easy. My 2.5 year old ate it, and my husband asked me to make it again. I made it exactly as written. I ran out of sauce though... next time I will double it. Also, this made 4 medium size burgers. 6 would have been pretty small.
